Commercial Fryers are changed once a week in most restaurant's. Oil is usually strained every night to keep the oil "fresh". Depending on what is being fried, flour can build up around the elements of a electric fryer and cause a fire hazard. Personal fryers "fry daddy"ect. should be changed every 5-6 uses. Oil can actually spoil and change the flavor of the food you are cooking, a stale oily taste that is unpleasant, if you are a consumer of fried foods then you probably have experienced the taste. Enjoy the food you eat, fried or baked.

there really no definit way of saying after how many uses you have to change. It all depends how frequently you use the fryer, whatever you've been frying and what quantities. The only real way of saying is taste. If the food is getting a little odd taste it's time to change.

In no way shape or form are french fry healthy for anyone, no matter what oil you use. If you must have french frys, cook them in organic extra virgin olive oil at the lowest temp possible, and change the oil each time you use it.

I think no matter how often you change the oil it will still be unhealthy. Deep fryers don't make health food.
Just for fun though when your fryer heats up, pour a cup of water in it.
