"i've done sex" generally means that a person has had intercourse at some point in their lives. "i had sex" usually is referring to a specific time which is probably more recent.
Either that or it can determine just how far into redneck country you're from.

"I've done sex" isn't something someone would really say. If you wanted to say this phrase, you'd go with "I've had sex". People will think you're foreign if you say "I've done sex".
