Meatloaf Wellington

2 medium carrots
1 stalk of celery
1 small onion
1/2 cup of parsley sprigs
2 slices of bread
1/2 pound of swiss cheese
2 pounds of stew meat
1 egg
1 teaspoon of salt
1/2 teaspoon of pepper
1 tablespoon of prepared mustard
2 tablespoons of milk
an 8 ounce package of crescent roll dough.

Preheat oven to 350 degrees. Coarse grind carrots, celery, onion and parsley into a large bowl. Fine grind bread, cheese and stew meat. Add egg, salt, pepper and mustard. Mix well. Shape into a loaf and place in a baking dish. Roll crescent dough quarters into 9" x 5" rectangles. Cut rolled dough in half, lengthwise, and cover loaf. Brush with milk and bake for 1 & 1/2 hours.

Rich is right about Jerk.....Always good.
I like Jambalaya. You can use chicken, shrimp and/or sausage.
Mix em or keep them separate. Best I think is mixed and I prefer Andouille sausage but any good smoked sausage will suffice.
Start with 2 pounds meat
slice the sausage no thicker then 3/16 inch
cube the chicken into ½ inch cubes
cut each shrimp into 2-3 pieces

1 large onion, chopped
1 bell pepper, chopped
3 - 6 cloves garlic, minced (amount to taste; I like lots)
4 ribs celery, chopped
3 small cans tomato paste
4 large Creole tomatoes, peeled, seeded and diced; OR
1 28-oz. can tomatoes
8 cups good chicken stock
Creole seasoning blend to taste (or 2 - 3 tablespoons); OR
2 teaspoons cayenne, 2 teaspoons black pepper, 1 teaspoon white pepper, 1 teaspoon oregano, 1/2 teaspoon thyme
2 bay leaves
Salt to taste
4 cups long-grain white rice, uncooked (Some people like converted rice, others prefer good old Mahatma. I use Uncle Ben's converted, as the rice doesn't get sticky or lumpy that way.)
Toss it all in your crock pot and slowly cook all day on low.

note: 2 teaspoons cayenne is probably too hot for most folk. Start with a half teaspoon and work from there.

For one person take two very large potatoes peel and cut into slices three medium onions done same way,you can use corned beef but the best is left over meat from sundays roast,and finally roast beef dripping salt ,pepper to taste.

Put pan to heat up when hot add1/2an ounce of dripping till melted and hot lower heat add layer potatoes salt and pepper lightly then add layer of onions now repeat with the rest.Leave on low heat to steam, check, now when potatoes are cooked give a stir around but leave potatoes slightly lumpy on doing this add the flaked roast beef now eat along with some oatcakes,lovely glubbly,make extra form into patties fry,bacon egg n beans hey presto supper.

INGREDIENTS :
1/2 cup pimento( allspice )
•1/2+ cup packed brown sugar
•6-8 garlic cloves
•4-6 Scotch bonnet peppers (if you cannot get loads of chillies)
•1 tablespoon ground thyme or 2 tablespoons thyme leaves
•1-2 bunches escallions (green onions) (spring Onions)
•1 teaspoon cinnamon
•1/2 teaspoon nutmeg
•salt and pepper to taste
•2 tablespoon soy sauce to moisten
METHOD:
1.Put content in a food processor or blender and liquify
2.Pour sauce in a Jar and keep refrigerated.
3.The sauce will keep forever if kept refrigerated
4.To increase spiciness blend pepper and pimento and add to sauce the hot peppers at any time.
Seasoning Instruction for Chicken
•Leave skin on chicken
•Rub the meat (chicken, pork or beef) with the seasoning.
•With chicken, be sure to rub under skin and in cavities
•Marinate overnight.
Either BBQ or in the oven it goes

I've neve had beetroot or suet. My fave is this cajun style steak salad. roll steak strips in garlic, paprika and chilli seasoning. Fry in butter as desired (rare to well done howerver you like it). Dice one tomato, one avocado one small onion into a large bowl add a can of corn cooked in tsp. butter and a can of black beans and 1/2 tablespoon of lime juice. Finish by adding cooked, drained steak. Toss lightly. serve

If you like spicy I do. Take round steak and cut it in little strips about the size of your index finger. Marinade overnight in Italian dressing. Slice jalapanos lengthwise and take out seeds. Put a strip of meat in there and wrap in a half a slice of bacon and secure with a toothpick. Grill or broil in oven.

For kids parties, fun to do - half pint of boiling water, packet of jelly, when jelly is dissolved, add one small tin of evaporated milk, and make up the rest to 1 pint in all, but leave enough room for 3-4 ice cubes to melt, when all melted and getting to set, WHISK for 3=4 minutes, then turn out into bowl or what ever as prefer ed, it turns out cream and mouse'ish, well its something different and fun for the kids, and it actually tastes quite good to! Well you DID ask,,,,,,,,Good luck! (Have just spotted that you wanted a MAIN meal = cringe - sorry!)

the person in germany has a great recipe. but it makes me crave spinach, boo hoo, all the spinach in whole USA has been thrown out because of the e.coli. So when it comes back, make a spinach salad, with a hard-boiled egg, chopped up. add bacon bits, real or fake bacon if desired. olive oil and balsamic vinegar dressing. black olives and real, shredded parmesan cheese on top. I miss spinach!!!

Chicken Enchillada's...boil 4 big chicken breast,boneless,set aside and pour in 2 cans of cream of chicken soup with 1 can measured of milk in 1 soup can,add small tub of sour cream,and about less then 1/4 cup pancake mix to make it thincken,mix this while you cut up chicken pieces in to bite size,have flour tortillas and once this mixture is thik,pour chicken bite size pieces into it,put inside tortilla shells,put mozzerella cheese on top,roll the tortilla up and secure with toothpick,cook in oven at 350 for 15-18 minutes,makes about 8 of these and you can serve with cut up lettuce,tomatoes,sour cream on the side!my son's fav and mine!

Simplest recipe of all - (West African) - One tin of corned beef. One tin of tomatoes. Mash together and add a tablespoon or two of palm oil. Heat until hot. Ready. DELICIOUS!

(You can add anything you like if you want - onion, garlic, herbs, spices. Serve with mashed potato, rice or as they do in Africa, a root staple called gari)

Second easiest (I invented this one) - boil half a swede in pieces. Mash like potato. Put it on a plate under the grill. When brown, add strong cheese such as Cheddar. Grill till cheese starts to melt. Serve with broccoli or just by itself. YUM!
