I 've been cooking something special once a week for my family last week it was White chili this week it was Enchilada bake. Next week I want to cook the best dinner ever.I have two small chidren that are really picky.Please include recipes if possible.

These are a few of my favorites!!

Chicken Parmesan
Serves 6

1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped

Instructions:
Preheat the oven to 350ºF

In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.

Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6

6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated

Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.

In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.

In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.

Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Spanish Meatloaf
Serves 6

1-1/2 lb Ground Beef, lean
1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers (you can leave these out if you don't want it to be spicy)
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)

Instructions:
Preheat the oven to 350ºF

In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.

Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.

Bake for 45 minutes; drain any residual fat if necessary.

Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Crab Quiche
Serves 6

1 (8 oz pkg.) Louis Kemp Crab Delights, flaked
3/4 Cup Mexican Style Cheddar Cheese, shredded
1/2 (8 oz pkg.) Cream Cheese, cut into 1/4'' cubes
1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray

Instructions:
Preheat the oven to 350ºF

Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.

Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.

Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.

Serve immediately.

A no fail dinner is always chicken parmigiana. You can make very easy too.

Just bread some thinly sliced chicken breasts by dipping them in egg that has been beaten. Then dredge them into a flour and bread crumb mixture. Heat a pan of vegetable oil and cook chicken through. Meanwhile heat the oven to about 300 degrees and put a pot of water on to boil. Then put the pasta in. I prefer angel hair.

Grate some mozzarella cheese and set aside. When chicken has been cooked place on a baking sheet and top with the cheese. Place into the oven until melted. Warm up some jarred pasta sauce. Pour over the chicken and pasta when plated. Voila! Hope you enjoy.

Braised Lamb Shanks. I found this recipe on Recipezaar and it's really good. 2½ hours 15 min prep 1 tablespoon olive oil 6 cloves garlic, peeled 1 large onion, chopped 1 large carrot, peeled and roughly chopped 1 (440 g) can peeled tomatoes, chopped,juice reserved 4 lamb shanks 250 ml red wine, good drinking quality 4 bay leaves 1/2 teaspoon dried oregano 1/2 teaspoon dried thyme 1 teaspoon salt 1 teaspoon fresh ground black pepper 1 liter beef stock or water (approximately) Pre-heat oven to 160c. Heat the oil in a big, heavy based, oven-proof pan. Brown the shanks well on all sides, remove, fry the garlic, onions and carrot until they are softened. Add the tinned tomatoes and their juice to the pan, sit the shanks on top, then add the remaining ingredients. Use enough stock to just barely cover the shanks. Put the un-covered pan in the oven. Braise for about 2 hours, checking it every 30 minutes or so. Turn the shanks each time you check, and replace the liquid (some will evaporate during cooking) to bring it to half-way up the shanks. The shanks are done when the meat is beginning to fall of the bone. Remove them and place on a warmed serving dish Strain the liquid, pressing with a spoon to get all the juices out. Skim and discard as much fat as you can, then reduce the remaining liquid to a nice gravy consistency. Pour over the shanks and serve. It's yummy with saffron mashed potatoes and peas

Chicken and dressing - in a casserole - it is really good!!!!!

Chicken and dressing casserole recipe.

* 3 cups cooked diced chicken
* 1 can cream of mushroom soup
* 1 can cream of celery soup
* 2 cups chicken broth
* 1/2 cup melted butter
* 1 package herb-seasoned stuffing mix, (6 to 8 oz)
* 1 cup shredded cheese, Swiss or Cheddar


Combine soups and chicken broth; add diced chicken to the mixture. Add butter to dressing mix. Combine chicken mixture with the dressing mixture. Place in a 2 to 2 1/2-quart casserole and bake at 350° for 30 minutes.
Top with shredded cheese during the last 5 minutes if desired.
Serves 6.

hmmmmmmmmmm never heard of white chili but ok how aout Shepard's Pie you cook up some hamburger and then you get a can of peas and carrots and a can of whole corn mix it with your hamburger meat and pour it into a cassarole dish and then you whip up some mash potatoes and put it on top like icing on a cake be genarous with the mashed potatoes and then top with cheese bake until cheese is melted or brown and bubbly and then take it out also make you some biscuits like grands and there you have it your meat potatoes covered with ohhh so lovely cheese and hot biscuits wow thanks for making me hungry and guess what it is even better the next day you can even tell the kids it's dinner cake and they will eat it right up hehehehe they will have no idea it is good for them why tell em ~~~~Bon appetite from chef Abbi

This is a good time of year to do lasagna - there are loads of recipes online, but I can't give you mine (sorry! family recipe thing!)

Another good thing that most kids really like is roast chicken. I do mine with rosemary, lemon, and garlic. Stuff them inside the bird (cut the head of garlic and the lemon in half). Then rub the outside of the bird with garlic-butter or lemon-butter and salt &pepper. Roast in the oven until the juice runs clear when you puncture the thigh, or until the internal temperature is between 175* and 180*.

Serve with your family's favorite side dishes, like mac& cheese, mashed potatoes, green beans, whatever the kids will eat. This makes good sandwiches with the leftovers, too.

Try making your own mini pizzas, I did this once and its so easy if you buy the dough already made. You just load them up with whatever your kids love, maybe they could even help by throwing different ingredients onto the dough themselves. It may not be the best dinner in the world but they would have a blast helping mommy cook :)

Italian food. Never fails. ex. fetticini alfredo, spagetti and meatballs w/ garlic bread. Sea food is also nice too. Crab, clams shrimp, lobster, ooo yea.
