If you are making for a bunch of people, variety is fun. Try some of these dividable sandwiches:
1. burrito size flat bread (they make plain for buritos, but I've seen spinach, garlic and onion, sundried tomato.) Add turkey, avocado, swiss cheese, then some lettuce (from the bags is fine, or you can make a mini salad with shredded lettuce, tomato, sprouts, cukes, whatever you like)roll up, add several toothpicks, then slice into pinwheels. lay flat in circles on round plate.
2. use little squares of bread (the 1 1/2 inch squares) OR a loaf of english muffin toasting bread. toast the bread. spread with plain regular or low fat cream cheese. add a small piece of smoked salmon. sprinkle with fresh parsley (chopped or a sprig) if you like.
3. little squares of bread again, or white bread. Cream cheese, cucumber slice, watercress. we served these for high tea at a restaurant I worked at.
4. roll up burrito flat bread again. tabouli, the salad mixture or shredded lettuce, slivers of any other favorite veggies, such as colorful peppers or carrots. this is good for vegetarians in your group. again, it can be pinned shut with those frilly toothpicks, and sliced into smaller pieces, so you can have a 'pu pu platter' of sandwiches!

EDIT: Just thought of 2 more. On american airlines once I was served a terrific cranberry bread with smoked turkey on top. I think I ate it open faced. , also when my boy was young I saw a recipe in a 'family fun' or 'parenting' magazine.. flat burrito bread with peanut butter, sliced bananas and, yes really, bacon. It was called a 'yo ho ho rollup, had something to do with pirates but who knows what??? anyways it was amazingly good, but don't know if the 'ladies' would like it.

Try this combo on wheat bread:
ham
turkey breast
2 kinds of cheese(your choice)
lettuce
pickles
sliced olives
tomato
pizza sauce(just a little)
mayo
Put the meat & cheese on the bread & warm them up a little in the micro & then put the rest on. These are delicious !

This is easy & yummy...tuna melt...Mix drained can of tuna with mayo & lemon juice,salt & pepper,then proceed to make grilled cheese the usual way but spread the tuna mixture on the middle..proceed as though it were a grilled cheese..careful cause it's really hot!

Chicken or turkey with lettuce, tomato, and avacado is the absolute best! Add bacon, cheese, or mayo (or all three) if you want. Very good.
Another really easy vegetarian one is good sharp cheddar with mango chutney on a good dark bread.

Peanut butter and grape jelly with banana sandwich- yummy and filling. Glass milk on the side. Woo-hoooo!

Try grilled cheese with relish or sweet pickles in it. Yum! Or you could go with mini beef and bean burritos with barbeque sauce instead of a sandwich.
