Simply put, no, you couldn't. Although recent rumours have hit the tabloid stands about people who claim to be able to do just that, relying solely on water for survival would not take you very far. From a biological point of view, your body requires organic compounds in order to synthesize most of the things it needs to, well, keep on working. This concept is fallible from pretty much every point : your body's internal environment, for one, needs to stay within certain biological limits despite finding itself in an ever changing external environment. This process, known as homeostasis, is for the most part carried out by proteins. Proteins themselves are complex polymers of peptide-bonded amino acids, some of which are essential and thereby are not synthesized by your body but rather need to be acquired from your diet. So strike one there for the water-only theory. Many protein mediated processes also require conjugation with cofactors or coenzymes in order to function, most of which are also acquired through your diet and are not available from water alone. When those proteins lose their function, entire downstream effects begin to take place, many of which ultimately lead to death. Then there's the issue of energy. The human body utilizes a molecule known as ATP as its "currency", if you will. When your ATP levels hit zero, you basically have no more currency and therefore go bankrupt. In biological terms, you die. So to prevent that from ever happening, your body undergoes the process of glycolysis, whereby the sugar you take in with your food is broken down and ATP is produced (following a complex cycle of substrate level phosphorylation and oxidative phosphorylation both in the cytoplasm and the mitochondria). If there is a general lack of sugar in your blood, your body resorts to creating sugar by first and foremost degrading digestive enzymes and then more complex proteins and eventually working its way up to your glycogen stores (glycogen being one of the main components of adipose tissue, i.e. fat). So as far as ATP is concerned, a water only diet could only sustain you for so long. The arguments continue, but I believe this is enough to prove the point.
