pasta salad (easy to make - and it doesn't have to be heated up)

veggies (carrots, celery, tomatoes & a ranch dipping sauce)
cucumber & tomatoes marinated in a vinegarette
sandwhiches can be very healthy with good meats, cheese and leafy greens on wheat bread
bean salad

If you can refrigerate your food here is a super quick Tuna-Mac salad that keeps well in the fridge for several days. Get a large (2lb) container of macaroni salad from the supermarket deli...the plainer the better...add a large drained can of Albacore tuna,about 1/4 large onion chopped fine, 1 celery rib,chopped well, about 1/2 to 1 cup of shredded carrots ( buy them pre shredded to save time ) 1 cup of frozen peas and about 1/2 to 1 cup of shredded cheddar or cheese of your choice. You don't have to add any mayo...the deli salad has enough already. Some of this salad and a glass of V-8 vegetable juice is a pretty healthy meal.If you have the time to pack your salad into a hollowed out tomato and eat the tomato you can skip the V-8.

Spicy Kofta Burgers
Preparation time less than 30 mins
Cooking time less than 10 mins
A delicious, simple spicy mix which is great served either in flat bread wraps or warmed pitta breads with a cooling yoghurt, mint and cucumber dressing.
Ingredients
1 small onion, finely chopped
2 garlic cloves, finely chopped
500g minced beef
2 tbsp curry paste
large bunch fresh mint, finely chopped
salt and freshly ground black pepper
Method
1. Combine all the ingredients in a large bowl and mix until well blended.
2. Shape the mixture into 4 burgers and chill until ready to barbecue.
3. Cook the burgers close to the coals for 3 minutes per side for rare or longer for medium to well done. Serve immediately.
Spinach and Parmesan Tortilla
Ingredients
200g/8oz frozen leaf spinach, preferably free flow
nutmeg, freshly ground
large pinch of saffron (optional)
50g/2oz parmesan, freshly grated
8 eggs
2 tbsp olive oil
Method
1. Defrost the spinach either in the microwave or by gently heating in a covered pan, stirring occasionally to break down the block (free flow packs of spinach make this easier). Put the spinach in a sieve and press with the back of a spoon or the side of a small plate to remove as much water as possible.
2. Mix together the spinach, nutmeg, saffron, if using, and parmesan. Beat the eggs to a light froth. Add to the other ingredients with plenty of salt and pepper. Mix well.
3. Heat the oil in a large frying pan, preferably non-stick. Pour in the egg and spinach mixture and cook over a fairly low heat for 10-15 minutes until the tortilla is almost set.
4. Remove the pan from the heat. Put a large plate over the pan, flip it over so the tortilla is on the plate, then slide the tortilla back into the pan to cook the other side. Return the pan to the heat for about 5 minutes until the tortilla is set. Slide on to a large plate and leave to cool.
5. When the tortilla has cooled to room temperature, cut it into eight each way to give you about sixty-four bite sized strips.
Blue Berry Muffin
Ingredients
250g/9oz self-raising flour
1 tsp baking powder
50g/2oz soft margarine
75g/3oz caster sugar
175g/6oz fresh blueberries
grated rind of 1 lemon
2 x size 2 eggs
250ml/8fl oz milk
Method
1. Preheat the oven to 200C/400F/Gas6. Lightly grease 12 deep muffin tins if you are using ordinary fairy cake paper cases, as the mixture will rise well above the paper cases, and place the paper cases in the tin. You do not need to grease the tins if muffin paper cases are used.
2. Measure the flour and baking powder into a large bowl. Rub in the margarine with the fingertips until the mixture resembles fine breadcrumbs. Stir in the sugar, blueberries and the grated lemon rind. Mix together the eggs and milk, then pour the mixture all in one go into the dry ingredients. Mix quickly to blend. The mixture should have a lumpy consistency. Spoon the mixture into the prepared tins or paper cases, filling almost to the top.
3. Bake in the preheated oven for about 20-25 minutes until well risen, golden and firm to the touch. Leave the muffins to cool for a few minutes in the tray, then lift out and cool for a little longer on a wire rack. Serve warm.

I keep these types of things in my bag when I won't have time for lunch:
- Laughing Cow cheese and Kashi crackers
- almonds
- an apple or banana
- baby carrots
- smoothies in a bottle
- granola bars
- a PB&J sandwich
- lentil or black bean soup in a cup, where you add water and microwave it
- snap peas in a bag
I try to keep healthy things like this, so then I won't stop for fast food!

Shop for the week. Fresh fruits and vegies, maybe sunflower seeds or some other types of nuts, then a sandwich. Also, even if you are not dieting, the diet drinks can give you some of the nutrients that you might normally miss and even give you a boost.

I have too make dinner for 4 on a tight schedule most days. I have learned to have dinner ready in 30 minutes or less.
Green Giant has frozen vegetables that come with sauce and they also have rice and veggie mixtures. those take 4 to 5 mins in the microwave or 10 to 15 min on the stove.
Wrap your meat in foil and put it in the oven or toaster oven. most meats will cook in 30 to 35 minutes.
drain the water off of can veggies and put them in foil. In the oven for about 10 minutes.
buy thin cuts of pork, they cook faster and have less fat on them. I cook mine in the oven or in the pan with Pam.
Lipton Rice Sides and Idahoan Flavored mashed potatoes come in lots of flavors and are as easy as boiling water.
The freezer section has lots of pre-prepared foods now.(even Hamburger helper), but not all of them are good.

-Microwave potato Take a potato, wash it (don't peel it), punch many holes on it with a fork. Microwave for 8 minutes. It'll be cooked. Split in half, add salt and any sauce you like (can be pasta sauce too, like bolognese), eat. :) -Melted cheese Put pieces of your favourite cheeses in an oven dish. Let them melt in an oven until they starts frying. Put on the table as it is and eat it with a fork in one hand and a hand-torn piece of a french baguette in another. Alternate a fork of cheese and a bite of baguette. Rawrr! Caprese salad Cut tomatoes and mozzarella cheese (the fresh, watery one). Add olive oil, salt, vinegar, basel. Mix. Eat. -Pasta Let water boil, add salt, add pasta. Cook for as many minutes as suggested in the box (8-13) which is until the pasta is not crunchy anymore (cut one, you can't see the white uncooked pasta inside) but not way too soft. Some little oil in the water can help if the pasta is not of good quality. Quick pasta sauces: Milk Cream and ham: Let fry the ham (5 mins). Add milk cream. Add a pinch of salt. Warm the cream, don't let it boil. Milk cream and lemon: Peel a couple square inches of the yellow outer layer of a lemon. Stick to the surface, don't cut the inner white part, it's bitter. Cut the peel very thin. Add the milk cream and the lemon peel to the cooked pasta, and heat it all for 1-2 mins to warm the cream. Serve with parmesan cheese. Aglio oglio e peperoncino (garlic, oil and pepper) Fry the garlic with some oil. Add red pepper. Eat a mint afterwards. (lol) Carbonara (best done with spaghetti, *must* be done with a very fresh egg): While the pasta is cooking, fry some bacon (cut in little pieces). Mix a fresh egg (one every 2 persons) with a good lot of parmesan cheese and black pepper. It must have enough parmesan cheese to look very dense. When the spaghetti are cooked, add them to the fried bacon. Add the egg/parmesan and mix on the fire until the egg is a bit cooked. It shouldn't look like an omelette with spaghetti, but like spaghetti with a very dense sauce on them.

oh girl brown abit of ground meat, cook a box of mac and cheese and you have an instance hamberger helper. add grade cheese and salt,pepper, and other seasoning ans it rocks. i use 3 1/2 cups of water and a 1/2 coup of milk and girl its to die for.its the bomb and its soooooo good. serve with a salad and its so good.
