I need to start eating more chicken and veggies. Im struggling to find a cookbook though. Any suggestions?

I suggest you Google all your recipes. (google "chicken recipe")
That's what I do if I ever have ingredients and don't know a recipe for a healthy meal.
For vegetarian recipes, http://vegweb.com/
thousands of users rate the recipes, and I recommend you only try the 5-star ones.

Betty Crocker's pretty good. Another source for the vegetarian style cookbooks - local organic markets and Barnes & Noble.

Rachael Ray has several cook books out. Also she has her own daily show. You can get great ideas from her. She does the 30 minute meals show.

I like the Rachel Ray cook books, she cooks things that most normal people eat, and you usually have the ingredients already in your cupboards.
