Raw on the half shell - my very favorite (but I have not eaten them lately because of health concerns - very sad about that). I love to eat them raw with a little cocktail sauce and horseradish - yum! They taste like the ocean - in a good way of course!!!!

Oyster stew - my second favorite way to have oysters - oh my so good - I like the milky stew with oyster crackers sprinkled on top. I grew up eating oyster stew alot!!!! My dad loved to make it!!:)

steamed oysters - my third favorite - there is a chinese restaurant near me that serves steamed oysters on the half shell - and they are very good!!!!!!

smoked oysters - my fourth favorite - they make a nice snack right out of the can!!! They are also really good on a salad!!!!!!

oyster stuffing - my fifth favorite - my mother-in-law always makes this at Thanksgiving - and it is quite tastee!!!!!

I guess you can tell I really like oysters!:)

Oh yeah - and I like fried oysters to!!!!! Owen Brennans makes the best fried oyster ceasar salad - it is awesome. I also like a fried oyster poboy with hot sauce sprinkled on the oysters - yummy!!!!!

Oysters Suzette
Serving Size : 12

12 Shucked oysters, in their shells
1 cup Diced bacon
1/2 cup Chopped onions
2 tablespoons Minced shallots
1 tablespoon Minced garlic
1/4 cup Small-diced green peppers
1 tablespoon Crystal Hot sauce
1 cup Bread crumbs
1/2 cup Grated Parmigiano Reggiano Cheese
1 cup Prepared Hollandaise sauce, warm (see recipe below)
2 tablespoons Chopped chives
1 lb Rock salt for the platter

Preheat the oven to 400ºF.

In a hot saute pan, render the bacon until crisp, about 2-3 minutes. Add the onions, shallots, garlic, and peppers. Saute for 2-3 minutes. Remove the mixture from the heat and allow to cool.

In a mixing bowl, combine the bacon mixture, Crystal sauce, bread crumbs and cheese together. Place 2 tablespoons of the bread crumb mixture on top of each oyster.

Bake for 6-8 minutes or until golden-brown. Remove from the oven. Place the oysters on a platter with the rock salt. Drizzle each oyster with the Hollandaise sauce. Garnish with chives.

Hollandaise Sauce
Serves 6 (4 Tbsp per serving)

1 Cup Hellmann’s Real Mayonnaise
1/2 CupEggbeaters
2 TbspLemon Juice
1/2 TspMustard Powder
1/4 TspSalt

Instructions:
In small saucepan with wire whisk beat all ingredients until smooth. Stirring constantly , cook over medium-low heat until thick (do not boil).

Serve over eggs, vegetables or fish.

Smoked or shooters.
The shooters I am talking about are in a shot glass with cocktail sauce in the bottom and then the oyster topped with pepper vodka.
You make the pepper vodka by adding fresh hot peppers to a bottle of vodka and let it sit a couple of weeks. HOT!

Deep fried in tempura batter.

Also, grilled in the shell until the shell opens. Crack the top off, cut the fastening muscle underneath, splash on a dash of tabasco and lemon juice and slurp away. Yum!
