If you've been around long enough, you probably have noticed that sometimes when a gift is given, the recipient will say something like, "Oh, you shouldn't have done it", which doesn't really mean that the giver shouldn't have done it. The recipient is pleased; however, for some crazy reason, doesn't want to admit it, thinking that the giver might discern them as a "gold digger". Properly thanking someone for a gift by saying, "Oh, it's lovely! Thank you so much", or "This is what I've always wanted," are expressions of gratitude. On the other hand, the person feels somewhat awkward, especially if the gift was unexpected. Maybe your friend was just experiencing an embarrasing moment, and didn't quite know how to react, even though she loved the watch. A smile can cover up a speechless moment, helping the recipient to gather her wits.
And another possibility is -- girls often say the opposite of what they really mean. Since I don't know the extent or the quality of your relationship, it could be that she hasn't known you long enough, or some other reason why she might feel it's improper to accept such an expensive gift. Last, but not least, you may have just caught her off-guard.
I think she was ultimately pleased. This is my deduction after my lengthy dissertation on various possibilities for her reaction. Otherwise, she would have gently returned the gift. If she still has it and is wearing it, I'd say you made the right decision. Therefore, you can stop worrying about her expression not matching her words, or vice-versa.

There are split seconds where our facial expressions match how we feel because we are unable to control it for that small period of time. Did she accept the gift, or ask you to return it? She could have been shocked, but since I wasn't there I don't know what facial expression she made which is pretty key in order to answer this accurately.

She acknlwledged your act of kindness and she appreciates it. However, you need to be aware of whether or not she is avialable. She may just be warning you that she can't be in a relationship right now, even if she does like you. Be patient. She trusts you and that is huge. Just be there for her and when the time is right she will come to you.

When she says don't get her a gift yet smiles, it means that she is happy that you got her the gift, and if she really meant not to give her a gift she would have been angry.. but if she smiled, she is happy that she got a gift..

why does she not want gifts? was sh duped in the past by a jewlery toting jerk or what. just tell her that you give little gifts because you want to and if she doesnt like it she needs to move on. that is of course if you are in a relationship. not sure by your question if you are or not.

Girls like to get things... but sometimes feel unconformable, it may make her feel like she is a moocher or that you feel like you need to buy her things. She sounds like a good catch because she wont use you... but she liked it!
