Can I substitute honey for the sugar in a jam recipe? Is there any other additions I need to make to make it work (like baking soda with maple syrup)?

jam making is all about pectin and in order to activate pectin you need sugar and heat. honey is a single chain sugar, a mono-saccaride, where sugar is a di-saccaride. i have never tried subbing honey but there may be an issue with activating the pectin. all you can do is try and accept that the batch may not turn out.

No, you can't use honey in jams. Just use sugar. Ball brand of jars has a recipe for a Splenda Jam, if you dont' want to use regular white granulated sugar.

Hmmm... I highly doubt it'll work. The key ingrediant would be sugar ... but honey sounds delish in home made jam! I'd try it, experimenting and finding out for yourself would be fun. : )

honey is quite tricky to work with. You would probably have to experiment, and have a few failures before you figure it out. Honey adds liquid to recipes so it is not equivalent to dry sugar!
