Wood or plastic? I put all my plastic ones thru the dishwasher, that takes care of just about all the stains, and they're properly disinfected and all.
Wood ones you can bleach, just soak in a bleach/water solution overnight then scrub it really well. Even if you don't get the stain out, at least you know it's disinfected and you won't get sick next time you use it!

SOAK IN BLEACH-WATER , LET DRY AND SAND IT DOWN ,-IF YOUR BOARD GETS STAINS IT'S BECAUSE YOU DON'T DAMPEN YOUR BOARD BEFORE YOU USE IT ( when you dampen the board it cause's the grain of the wood to expand and that HELP'S keep the stains off (it also keep's the board CLEAN !)

If it is wood just sand it out with sand paper. If it is plastic, I would try bleach, and then wash real good.

Only sanding, but it may be too deep.
The entire surface.
Bleaching may help, but Im don't know if thats the right way.

Sandpaper if wood, replace with a new one if plastic
