Does anyone have a banana cake recipe that only requires 1 egg? All the recipes I have seen need 2. Also Martha Stewart said that if you want you can halve the amount of sugar in any cake recipe. How does this affect the texture?

you can make the cake with one egg.
also, in some cases, 1lg. egg counts as 2sm eggs.
and box banana cakes are awesome! you can always use 1 egg in those, just add a tiny bit more water or oil.

now I want to make one... mmmmmmmm

I only know of a recipe for banana cake that calls for two eggs..however like someone else mentioned you could substitute applesauce for the other egg or even mayonnaise. And yes, you can halve the sugar in cakes..I do it all the time because I don't want my kids so hyper and the cakes always come out fine. Good luck!

You can add extra oil (or even extra applesauce) to replace the egg (you may want to decrease the flour a bit--by a quarter cup or so). The sugar decrease will not affect the texture.

Duncan HInes makes a great banana cake mix, it's a whole lot better than from scratch.

If you beat the egg white to a peak and fold into any cake mixture, it makes it fuffy.

be care about subsuting oil or applesauce for your eggs as the eggs are a leavening agent and your product will not rise...........
