If money is no object, I'd recommend the St. Louis Hotel, 730 Bienville (you'll pay $200+ per night, but it's truly luxe); or the Hotel Maison de Ville, 727 Rue Toulouse (Elizabeth Taylor has stayed here). The Bistro at Maison de Ville is outstanding, and very romantic, so even if you don't stay there, you might want to eat there.
For the budget-minded traveler, the Andrew Jackson Hotel at 919 Royal Street (get a balcony room), where rates can be half as much as the St. Louis.
All the hotels are in quiet French Quarter locations and have lovely Creole courtyards.

I also think that no trip to New Orleans is complete unless you've taken a walking tour with Robert Florence's company Historic New Orleans Tours. Robert's an expert on the city and its cemeteries. You won't be disappointed, whether you take a historic tour of the Garden District and view all the gorgeous homes, or the more cuddle-inducing Haunted New Orleans tour, where the ghost stories will make your spine tingle.
If you're interested in exploring Cajun music--or if you just like to dance--a trip to Tipitina's (501 Napolean) for the Sunday fais-do-do is a must. If you can, go on a Sunday when Bruce Daigrepont is playing. He's amazing.

the 2 things off the top of my head for a 'romantic' stay would be
nice carriage ride through the french quarter.. they can be found infront of St Louis cathedral .. if ur walkin around the french quarter.. u wont miss it.

you can take a ride on the Natchez Steam Boat. You can choose to take a 2 hour tour either for lunch or dinner. Its great.. you tour the mississippi river .. while having lunch/dinner to a nice local jazz or cajun music band .. i'd make the reservations through the phone just to confirm everything if possible.

not romantic but very interesting.. their haunted history tour is cool.. tour the french quarter while being told all the haunted stories of differen't buildings and such. i also went on their Garden District tour which was interesting. tour beautiful million dollar homes and be told stories of celebrities like john goodman.. Trent Reznor .. Anne Rice etc .. i'd recommend any tour by them really.. they do a fantastic job.
if you are coming closer to christmas .. you can take a carriage ride through City Park and view all the christmas displays

the Hotel Place d'Armes is very romantic. The rooms facing the pool are what you want. It is just behind Jackson Square and you can walk easily to anywhere you want in the quarter. Be sure to take a carriage ride as it is quite nice. There are lots of great restaurants. We enjoyed the ride on the river boat Natchez and they have a wonderful night cruise.

The Wyndam hotel one block off of Bourbon Street. You can walk to the market, the aquariam, Jackson Square or Bourbon Street from there. You can catch the riverboat or ride the trolley to the zoo. With it being a block from Bourbon Street, the noise doesn't bother you, plus they have a private courtyard.

I like The Hotel Monteleone. It is on Royal street in the Quarter, Royal is awesome, a block off of Bourbon street. It has a pool on the roof too.
