Olive oil doesn't burn as easily as butter, but it has a lower smoke point than most vegetable oils. Smoke point is a gauge of a fat's ability to handle heat without burning. Of the cooking oils, peanut oil has one of the highest smoke points and is preferred in high-temperature frying, if there is no issue of peanut allergy.
Olive oil's smoke point is higher than butter's and a little higher than canola's, but much lower than peanut oil.
Fried chicken is usually fried at about 350 degrees, well below the smoke point for olive oil. But there are two other problems:
• Taste. Olive oil has a distinctive taste that would be noticeable in the cooked chicken.
• Cost. Even pure olive oil, the lower and cheaper grade, is more expensive than vegetable oil. Extra virgin is the most expensive, so it's best saved for uses when you will only use a little and when its delicate taste will be highlighted.
In testing fried chicken recipes, we've found the best fat for taste and crust development is lard, but good-quality lard is hard to get. The next best is shortening, then peanut oil.

Olive oil has a low smoking point and is not recommended for deep frying. If you want make some french fries, try this: Cut up some Russet potatoes into wedges. Spray with olive oil and season with some salt. Preheat oven to 450. Place potatoes on a metal baking pan, cookie sheet will work, and bake until tender. Try preheating the tray before placing the potatoes, this will make for crispier potatoes.

i heard olive oil has a lower smoking temperature than canola or peanut oil, so it might smoke in a deep fryer. and it needs to get really hot to deep fry correctly and not have oily soggy food. i'd stick to a lighter oil, even though i cook mostly w. olive oil too.

you can use it BUT not for frying much. Olive oil breaks down too fast and has a lower smoke point than other oils. Olive is also A LOT more expensive. get a large container of peanut oil.

Yes you should
use olive oil to deep fry chicken fingers, or what ever you would like to cook. It cooks hotter with less smoke also, and better for ya

You can use it...but I wouldn't recommend it...not for chicken fingers. Actually the best oil to deep fry chicken fingers in is Canola Oil...better, cleaner taste and oddly better for you...less cholesterol in Canola Oil.
