I have jalepino peppers and also the large pointy red ones (banana?) and would like to put them up for winter.

I have had great success freezing whole chiles (trim the stems to 1/4 inch). They should be prepared for use while still frozen (stemmed, seeded, deviened, and chopped or sliced).

you will find an easy recipe on the website given to you below. I must warn you to wear gloves as your hands may be sensitive to the oil in peppers.
