This one kicks tush, and is sooooo simple that anyone can do it! I made some two years ago at Christmas time, and all of my friends used this recipe last year.
INGREDIENTS:
* 1/2 cup butter
* 2 1/4 cups brown sugar
* 1/2 cup milk
* 3/4 cup peanut butter
* 1 teaspoon vanilla extract
* 3 1/2 cups confectioners' sugar
DIRECTIONS:
1. Melt butter in a medium saucepan over medium heat. Stir in brown sugar and milk. Bring to a boil and boil for 2 minutes, stirring frequently. Remove from heat. Stir in peanut butter and vanilla. Pour over confectioners' sugar in a large mixing bowl. Beat until smooth; pour into an 8x8 inch dish. Chill until firm and cut into squares.

1 cup granulated sugar
1 cup brown sugar, firmly packed
2 tablespoons butter
1/2 cup evaporated milk
pinch of salt
1 cup marshmallows
1/4 pound peanut butter
1 teaspoon vanilla
Cook sugar, butter, milk and salt to soft ball stage (235° F–240° F on a candy thermometer). Add marshmallows and peanut butter just before removing from heat. Do not stir. Cool to room temperature. Add vanilla. Beat until creamy, thick and holds shape. Pour into well buttered shallow pan. Cool and cut into squares.

INGREDIENTS:
* 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
* 1/2 cup creamy peanut butter
* 2 (6 ounce) packages white chocolate squares or white baking bars, chopped
* 3/4 cup chopped peanuts
* 1 teaspoon vanilla extract
DIRECTIONS:
1. In heavy saucepan, heat EAGLE BRAND® and peanut butter over medium heat until just bubbly, stirring constantly. Remove from heat. Stir in white chocolate until smooth. Immediately stir in peanuts and vanilla.
2. Spread evenly into wax paper lined 8-or 9-inch square pan. Cool. Cover and chill 2 hours or until firm. Turn fudge onto cutting board; peel off paper. Sprinkle with additional chopped peanuts if desired. Cut into squares. Store leftovers covered in refrigerator.
