Vitamins, minerals, fiber, antioxidants etc all very needed things for the child.
Chewing vegetables, helps the development of teeth.
Promotes good eating habits early on in life.
You could probably get vitamins and minerals from supplements or pills, but the body absorbs the naturally available vitamins (except folic acid) the best.
So, it is a good choice of kids, giving them a piece of fruit for snack is much much more beneficial and wise than givign them a cookie.

I think carrots are supposed to help your vision. But then again I rarely eat or ate carrots and I see just fine.
