Or does it affect how the muffins bake?

Well as long as you keep it cold and make sure it is in a nice brine and the beak is gone and there are no feathers... Oh, I thought you said Puffin... Silly me.

Yes. I used to work in a bakery. We would make the muffins around 6 AM every morning. Immediately after putting the day's batch in the oven, we'd mix the batter for the next day's batch and then just refrigerate the batter until the next day. It doesn't affect how the muffins bake.

I would let the batter sit out at room temp. for at least an hour. After all, when you bake them fresh, the batter is room temperature.

At McDonald's they have pre-made batter in buckets. Just make sure it's put in the fridge and when taken out again, stir it again just to get that air!

no it does effect the baking method if it is in a tight container. i think it will turn out fine. i did the pancakes that way and they were fine. just bake as usual.

My experience is it's always a little flatter. It will still work, just not as well as if you make it fresh and let it sit for just a few minutes.
