NO BAKE CHOCOLATE OATMEAL COOKIES

2 cups sugar
1 stick butter (1/2 cup)
1/2 cup Pet milk
1 teaspoon vanilla
2 1/2 tablespoons cocoa
1/2 cup peanut butter
3 cups oats

In a medium saucepan, combine all ingredients except peanut butter and oats and cook over medium heat. Let boil for 5 minutes, stirring constantly.
Remove from heat and stir in peanut butter and oats.

Spoon out quickly onto wax paper or aluminum foil. Cookies will harden as they set.

These no-bake snacks are so simple to make and very tasty! Children will enjoy helping with these, too.



Butterscotch (or Chocolate) Hay Stacks Recipe #1
To make these hay stacks, you will need the following ingredients:

2/3 cup peanut butter

1 (12 oz.) pkg. butterscotch chips

1 (3 oz.) can chow mein noodles

*1 cup chopped walnuts or peanuts (optional)

*Instead of chopped nuts, you can use crunchy peanut butter and omit the nuts.

Melt the peanut butter and butterscotch chips. Mix in the noodles and nuts until coated well. Drop by teaspoon onto the wax paper. Put into the refrigerator until set.

For variety, our family also likes chocolate haystacks. Just substitute chocolate chips for butterscotch chips.

You could also wait until the butterscotch haystacks harden and then dip half into melted chocolate for a colorful look.

CHOCOLATE PEANUT BUTTER BARS

2 c. confectioners' sugar
1 c. smooth peanut butter
handful of butterscotch chips if you have them around
2 c. chocolate chips
2 c. graham cracker crumbs
1/2 c. butter, melted

Mix confectioners' sugar, cracker crumbs, peanut butter, butter scotch chips and butter in a medium size bowl until blended. Scrape into ungreased baking pan and press into an even layer. Spread melted chocolate over top. Refrigerate at least 2 hours until chocolate is firm. Let stand at room temperature 15 to 20 minutes before cutting with sharp knife into bars. Bake in 13x9 inch baking dish.
