And do all schools in China start around 8am? Or do they start an hour later in central China?

According to http://sunrisesunset.com: when I punched in coordinates for Hong Kong (pretty far east) and the westernmost boundary of China, it gave me the following sunrise and sunset times for today, September 21 2006. All of China is GMT +8 hours.

East: Sunrise: 6:11am Sunset: 6:21pm
West: Sunrise: 8:47am Sunset: 9:01pm

Pretty big difference, nearly 3 hours. Not sure if the sunrise would ever get as late as 10AM, but feel free to go to this site and check it out: http://sunrisesunset.com/custom_srss_calendar.asp Scroll down to "Enter your own location" and tick off all the boxes. Use the following coordinates:

Westernmost China: N 39.09596 E 74.70703
Easternmost China: N 29.76438 E 121.28906

I went to Kashgar this past summer. Kashgar is the westernmost city in China. It should be the equivalent of 3 time zones behind Beijing, but because of China's policy, it is on the same time zone.

This means that you are correct: the sun rises late in the day, and sets very late at night.
Of course, what time this happens also depends on the time of year.
When I was there the sun actually rose at 8am and set about 11pm, but in the winter it probably rises at more like 10am and sets at 7 or 8pm.

China only has one time zone:beijing time. Most of school&company start around 8am~9am. No later in central China.

The sun rises between 6am and 7am dependent on N or S and time of year.
Schools start at about 6.30am.(7.30 for primary school) they have 2-3 hours for lunch. When I was in north China, they shortened lunch by half an hour in winter so that primary school finished about 4.30 instead of 5.00

yes, we use standard Beijing time all around China.

and usually people work at 8 in the morning in east and central part of China. But in the west part like Xinjinag autonamous region, timetable are consider 2 hours later than Beijing time, but they still use Beijing time, so, they go to work at 10am and knock-off at 7pm. In summer, sky won't become dark till 10pm...
