Imitation crab meat is (generally) actually fish, usually an Alaskan fish, which has similar texture of crab meat. There is no need to cook it, as it is ready to eat out of the packaging. It's great used in cold salads, or with sushi wraps. I have never used it for baking, not sure if would hold up under the heat. Hope this helps!

Imitation crab is already cooked. You can use it right out of the package.
What imitation crab consists of is a fish called pollock. It is pureed, flavored and then reformed into a flat sheet that is dyed and twisted into a "rope" then cut into sections and packaged.
Personally I think I have been spoiled. Real crab or no crab for me.

I have used the imitation crab to make a crab casserole and it was good. Not as good as real crab or lobster but still a good meal and a lot less expensive.
