It really is,and even the cheapest,like cheddar,costs alot,it's only milk gone solid.

I have seen cheese being made, and trust me.. it takes forever and so many man power.. its fantastic to watch, but it will put you off cheese, because of the amount of salt that goes into it !! really, if you get a chance, go see how they make it

its not just milk gone solid. it takes a long time and much work to make cheese. And if the process isn't done properly, the cheese doesn't work. They first sterilize the milk by heating to at least 140 f then cool it back down to about 85 f and add rennet and colouring, then they stir it for a few hours until it starts to thicken, then they have to leave it sit for a few hours until the solids separate from the whey, then they have to cut up the curds, and separate the two components, wash it , salt it, wash it again, and then press it into shape. then it has to sit for 3 months to 5 years, in a temperature controlled room. Even while sitting, thecheese hasto be monitored to ensure there is no mold or animal infestation. they start with about 200 gallons of milk in a vat, and wind up with about 50 pounds of cheese.

think of the long way the milk goes until it's cheese... a lot of people working for it, so that cost money, but the best thing is buy a goat - than you'll have milk, cheese and finally - some great milk!!!

Cheese is all the good stuff from milk. Plus it costs more money, because there's extra processing steps.

After wiping out half the cattle in britain through mad cow it's a wonder the price of milk isn't a pound a pint.
Cheese does take a fair bit of procecing.

Because it's Good! Actually price depends on demand, supply, and process time. Since the supply is good I would blame the price on demand. Take for example that tickle me elmo doll they just came out with .. I bet some are selling the $20 toy for 80-90$ on Ebay...

well since mad cow disease has hit the US, the demand for any form of cow products has gone way down compared to past years. so with the demand being lower, milk prices have gone up, the production prices to make cheese has gone up; so with that the price of cheese has to go up regardless of the type of cheese.

it is not the cost of the milk but its the processing that sets the price and the amount of milk to make that little block of cheese....and aging process you to store it somewhere under climate control...so enjoy cheese while we can...its the poor farmer that suffers it the middle man and the people who put their name on the cheese thats gets the money.......

because there is a drought in some places and cows arent as healthy. since there arent as many healthy cows, that is less milk, cheese and other dairy products until the drought is over.
