The hat you see is called a miter or mitre and comes from the Greek society that Christianity was born into. In Greek churches a similar type hat is worn both by bishops and by those getting married.
In early Christian worship, and until the Protestant Reformation, Christians did not use pews or chairs. If you go to Europe and go in an old church or in most other areas of the world, you won't find a place to sit. Instead, the congregation moved with the celebrant. If that person was short and everyone were crowded together, you wouldn't know where they were. The guy leading the service has the tall hat.
It is a leftover from early Christianity.

Same thing as priestly robes I guess. Priests are supposed to be the first of the church although bad doctrine can show that a church has had the candlestick taken away.
