I'm having trouble finding cracked wheat in my area and was wondering if couscous was the same thing. My doc said I shouldn't have rice and to have cracked wheat instead, because I'm diabetic.

Couscous is a pasta... not so good for a diabetic. You can look in your supermarket for Kasha, which is buckwheat. Bulghur is like cracked wheat, and may be easier for yout to find. Check in health food stores or in the Organic section of your supermarket.

Couscous is the smallest pasta. Check local health food stores, or Organic sections of grocery stores.

Couscous is a pasta. Little bits of pasta dough are rolled (originally by hand) to make those tiny pasta beads. Their advantage is that they cook very quickly (put in to a pot of just-boiled water for five minutes) but they are just as fattening as spaghetti or noodles.
