i have a food hygiene test tomorrow at foundation level. i've done it before, just renewing it. i know a few basics but are there any factors that people tend to forget and lose points on?

I've been through a food sanitation class, and HACCP exam. Know your flooring and how to keep it clean. Brush up on food illnesses and incubations periods and symptoms. Know your food danger zones. Don't pick your nose. Keep your apron clean. Everything else (since you've already taken this) should be literally, gravy!

Just keep remembering the word cleanliness.

Cleanliness of staff washing hands, food being washed before cooking, pots and dishes cleaned before cooking and serving, having napkins clean and starched, small 'finger wash'
towelettes available and try to have waiters serve the food to the patrons instead of buffet style. At a buffet style meal, patrons can sneeze
into bowls others will take their food from or may actually drop the food (unsanitary) and then put it back for someone else to take. Remember to have plenty of soap and towels in the restroom. That's all I can think of at the moment. Good Luck.
