One is correct if there's a specific lunch break (for example, no one at all works from 12-1). Two is always acceptable. I would almost certainly say "during my lunch break."

All of them are wrong especially if you are doing formal writing. The correct version would be:
I do not sleep during my lunch break. "Don't" is not kosher when writing, it allowed for speaking.
Among your choices 'I don't sleep during lunch break' is marginally correct.
'I don't sleep during the lunch break' refers to a specific lunch break and thus ' I did not sleep during lunch break' would be the most correct form of the sentence

Both are correct... when I' m taking casually to my friends though I would use "I don't sleep during lunch break"
