My friend in Scotland bought me quite a few "cider and baby shams". Oooh, knocked me for a loop but really tasty. What on earth is baby sham?? I'd love to recreate it. She said it was like vermouth, but I don't think so.

Baby sham is actually Baby Cham,ie: small bottle of champagne
or method champenoise [depending on it's origin] So just get hold of some small champers [300ml.] and add it to your cider for extra bubbles [that's what does the damage] and a little smooth sweet flavour.

When I lived in England years ago, the Brits would drink baby sham with brandy.

its a kind of domestic champagne similar to CA champagne(not from France)
