it's fat.
the best way to reduce the "foamy stuff" is to really wash the chicken b-4 u boil it and try to remove as much fat and slime as possible.
that's what i do and i really don't have that foamy problem any more.

that the old blood.......i skim it off as it has no value and it looks terrible...if you want to prove it to your self take a small pan and boil a little water and the liquid the chiken is sitting in pour in the boiling water and see what happens your fat from your chicken does not do this

That's the fat, skim it off for lower calorie's and get rid of the greasy taste.
