It is symbolic. It means that Eve is to remain close to Adam's heart. That she did not come from the front of him, or behind him. She is not better or worse than him, but she came from the side, they are to be equals.
I don't think he really took a rib out. I personally believe that both Adam and Eve were literal children of God.
