Roasting!!!! Season the bird inside and out. Stuff the cavity with a couple heads of garlic, lemon wedges,and various herbs. Take a softened stick of butter and spread it all over the bird. Take about 4 slices of smoked bacon and drape it over the chicken. Put it in a preheated oven at 450 for about an hour. At the halfway point remove the bacon slices, they'll be nice and crispy and they make a good snack. You might try putting new potatoes or radishes in the roasting pan with the bird for a nice side dish.

Put some herbs in the chicken
Put the chicken is a dish
Put some small potatoes around the chicken
Put some chopped onions around the chicken
Put a lot of pepper, and other herbs (like thyme for example) on the chicken and the vegetables
Put some olive oil on the chicken
Put some chicken stock and some white wine on the chicken and the vegetables too (to moisturized your dish)
Then cooked in the oven during 45 - 60 minutes
Every 10 minutes, open the oven, and take some liquid from the dish with a spoon to moisturize the chicken (so it won't burn)
If you see there is no more liquid, add some chicken stock

Place uncooked chicken UP-SIDE DOWN in the casserole dish,
for the first half of cooking time, as the fat will run down into the chicken,
giving it extra flavour and less chance to dry out.
Add whole onions when you turn the chicken the right way round, to bottom
of dish, and cook as normal.
For the last ten minutes of cooking time remove onions add to saucepan
to help make the gravy, cook the chicken without the casserole lid on to
crisp skin.

Lots of breadcrumbs,
One egg, (might have to add slight water to help bind stuffing)
Seasoning, Could use, dried apricots, plums, chestnuts, herbs apples, pears
choice is yours. Very finely diced.
Add all the ingredients in a bowl, mix until it binds together, form stuffing into balls and place in a greased dish.
Cook approx 20-30 minutes Gas 6. 200c

The best way is to make a beer can chicken. Season the chicken with whatever you like, rosemary and garlic are good. Then you empty out half a can of beer (or soda) and stick the can in the opening of the chicken. Place some mesquite chips on your grill to add some smoked flavor. Then place it on the grill and cook it until it is done. It's hard to get the chicken on the grill just right with a can sticking out of it. They do sell actual beer can chicken holders on the internet (we got ours from Ebay) and I've seen cheaper ones in WalMart. There is something about the liquid in the can that will make the chicken very moist, you've got to try it. We love our chicken that way.

Oven-Crisped Chicken with Maple Vinegar Sauce
THIS IS A FAST, easy way to make very crisp chicken and everybody in the history of humanity loves crispy chicken. Instead of serving it with biscuits and honey, which is traditional in the South, we made it with a maple vinegar sauce, which adds sweetness through maple syrup. We topped it with cranberry, almonds, and shallots, which have the bitterness to cut sweet richness and the nuttiness to work with the maple syrup.
SERVE5 4-6
SAUCE
2 tablespoons butter
1/4 Cup chopped shallots
1/2 teaspoon cracked black pepper
1/4 teaspoon nutmeg
1/3 cup cider vinegar
1/3 cup maple syrup
Melt the butter in a medium saucepan over medium-high heat. Add the shallots and cook, stirring occasionally until they are soft and translucent. Add the pepper and nutmeg. Add the vinegar, bring to a boil, then add the maple syrup. Return the sauce to a boil and reduce by half. Set aside.
CHICKEN
1 3/4 pound chicken (have butcher splay the chicken open it so it lies flat)
Kosher salt
Freshly ground white pepper
2 tablespoons grapeseed or other neutral vegetable oil
Preheat the oven to 500 degrees. Make an incision in each of the chicken's thighs, then tuck in the legs. Season the chicken on both sides with salt and pepper. Heat the oil in a large heavy ovenproof skillet over high heat. Place the chicken, skin side down, in the hot pan then immediately transfer it to the oven. After 10 minutes, flip the chicken. Continue roasting, basting every so often, until the thigh juices run clear, 25-30 minutes total roasting. Remove the chicken from the skillet and allow it to rest for about 10 minutes. Pour the fat from the roasting pan and deglaze over medium low with the Maple Vinegar
Sauce. Cook just until the sauce pulls together, less than a minute, then set aside in a warm place.
TOPPING
3/4 Cup slivered almonds
3 tablespoons butter
1/2 cup dried cranberries
1/2 cup leeks, finely sliced then measured
1 tablespoon dried homemade bread crumbs
Kosher salt
Freshly ground white pepper
Combine the almonds and butter in a small skillet. Heat over medium-high heat and cook, turning the almonds frequently, until they are golden brown. Add the cranberries and leeks. Continue pan-roasting for 1 minute. Add the bread crumbs and season with salt and pepper.

I found that if you want a simple roasted chicken that is very delicious is to not over do the spices. You cut the backbone out and spread open the chicken on a large cookie sheet with one inch sides. Just salt and pepper both sides and roast for about 45 mins 350 degrees until the skin is golden brown and crispy --Yummy!

Simple is always the best. Onions on the bottom, salt, pepper, thyme and paprika. No need for juices cus the chicken releases alot of juices. Just cover with foil and baste every 25 minutes with its own juice. Uncover for the last 20 minutes to get a nice color. Enjoy.

The best chicken all my friends ask for is my Mesquite smoke routisorie chicken. Sal peper the inside , slip it on the spit and smoke it with indirect heat (medium) for 2 hours. Got this from a place in Mexico called El Charo's Chicken.

In the crock pot. Take the whole chicken wash is and season it up with seasons of choice. I like to take garlic and onion and place it under the skin. Crock pot for 8-10 hours on low and serve with rice. You can use the drippings to make a gravy.

Stuff the cavity with cut up apple and orange. Sprinkle the chicken with some rosemary and lemon pepper. Bake till golden brown (cover with aluminum foil while baking.) Delicious.
