here's a great and filling sandwich recipe.
mix a can of tuna with some mayo (very little) and a dash of black pepper.
on one slice of a wheat bread spread a lettuce and top with the tuna mixture. cover with another slice of bread. top the second slice of bread with ketchup or relish (optional depending on ur diabetic requirement) and fry an egg in a non stick pan with no or minimal oil and put it on the second slice. cover with a third slice of bread.
u can spread low fat butter or margerine on the bread slices too if ur diet allows u too.
this sandwich is extremely filling and very healthy too.

Instructions:
In a large nonstick frying pan melt the butter over medium-high heat. Add the eggs and scramble slightly. Allow the eggs to coat the pan and cook evenly. Crumble the bacon into the eggs, add the mushrooms and cheese, and cook for 1 minute.
Carefully slide 1 end of the omelet onto a plate while folding the other end over on top, like a taco. Garnish with scallions and serve immediately.

I've discovered the best bread at Super-Walmart! It's a Roasted Garlic Italian Bread, almost like a sourdough, with whole cloves of roasted garlic in it. It's got a lower glycemic index than normal bread, so not too bad for you.
Anyway, it's great for egg sandwiches! Had one this morning with cheddar and avocado!

Do what my cousin does. He makes an omelet with "Eggbeaters" brand egg substitute. Uses Turkey Bacon and fresh veggies. He has lost a few pounds and doesn't get tired of it.

French toast with just butter?
Wraps are great, you can fill them with anything. My favorite is eggs, sausage & cheese.
How about home fried potatoes, add a little onion & peppers for flavor.

Spring-Fresh Frittata
1/4 pound whole tiny new potatoes, coarsely chopped (about 1 cup)
1 cup water
1/4 pound asparagus spears, trimmed and cut into 1-inch lengths (about 1/2 cup)
1-1/2 cups refrigerated or frozen egg product, thawed*
1/4 cup fat-free milk
1 tablespoon snipped fresh rosemary or 1 teaspoon dried rosemary, crushed
1/8 teaspoon pepper
Dash salt
2 teaspoons olive oil
1 small onion, thinly sliced and separated into rings
1 clove garlic, minced
1/3 cup crumbled basil-and-tomato feta cheese
1 small tomato, seeded and chopped
1. In a medium saucepan combine potatoes and water. Bring to boiling; reduce heat. Simmer, covered, for 10 minutes. Add the asparagus; return to simmering. Simmer, covered, for 4 to 6 minutes more or until vegetables are just tender. Drain the vegetables well.
2. Meanwhile, beat together the egg product, milk, rosemary, pepper, and salt; set aside. In a 10-inch broiler-proof skillet heat olive oil; cook onion and garlic in hot oil until tender. Stir in potatoes and asparagus.
3. Pour egg mixture into skillet over vegetables. Cook over medium heat. As mixture sets, run a spatula around edge of skillet, lifting egg mixture so the uncooked portion flows underneath. Continue cooking and lifting edges until egg mixture is almost set (surface will be moist). Sprinkle with the feta cheese.
4. Place broiler-proof skillet under the broiler 4 to 5 inches from the heat. Broil about 1 minute or until the top is just set. Sprinkle with tomato. Cut into wedges. Makes 4 servings.
Peachy Rice Pudding
1-1/3 cups water
2/3 cup long-grain rice
1/2 of a 12-ounce can (3/4 cup) evaporated fat-free milk
1/3 cup mixed dried fruit bits
2 teaspoons honey
1/4 teaspoon pumpkin pie spice or ground cinnamon
1/8 teaspoon salt
1 cup chopped, peeled peaches or frozen sliced peaches, thawed and chopped
1/4 cup vanilla fat-free yogurt
1. In a medium saucepan stir together water and uncooked rice. Bring to boiling; reduce heat. Simmer, covered, for 15 to 20 minutes or until rice is tender.
2. Stir evaporated milk, fruit bits, honey, pumpkin pie spice or cinnamon, and salt into cooked rice. Bring just to boiling; reduce heat. Simmer, uncovered, over medium-low heat about 5 minutes or until mixture is thick and creamy, stirring frequently. Serve pudding warm with peaches and yogurt. Makes 4 servings.

Cheese omelets are always good, poached eggs, breakfast burrito (eggs, cheese, whatever you like) wrapped in a king size corn tortilla. Corn tortillas don't have any white flour in them so you don't have to worry about the sugar.
