I would say "I have spent New Year's Eve with a guy for the last 2 years." then if u want it to mean a different guy u would say I have spent New Years Eve with a different guy for the last 2 years. or at least that's what i would say

This is acceptable and means you have been spending it with the same guy. Changing it to "spent" wouldn't necessarily mean the same guy.
"Have been" is a past progressive tense, which means it's an ongoing thing.
"Spent" is past, meaning it's something you did at specific times in the past.

It could mean two different guys. You should specify 'the same guy'.
Try this :
I have spent the last two new year's eves with the same guy.

Better would be....
For the past 2 years I have spent New Years Eve with a guy.
It is ambigious as to whether you mean the same guy or just any guy. So... if you mean the same one just put 'with the same guy'.
