Lime-Pickled Red Onions
Ingredients:
1 large red onion, thinly sliced
1/4 cup fresh lime juice
1 Tbs. olive oil
1/2 tsp. salt
2 Tbs. chopped fresh cilantro
1 tsp. chopped fresh oregano or 1/2 tsp. dried oregano
Preparation:
Mix all ingredients together and let the onion marinate for at least three
hours at room temperature. The onion will keep for up to four days if
covered in the refrigerator.
Yield: 1 cup
* Chef's note: "Try these zesty onion slices in tacos, burritos and
quesadillas. They're great on sandwiches of all sorts, too, from roast beef
to grilled cheddar cheese. You can also use them to liven up grilled fish or
chicken breasts."

ÙFor Pickle onions:
onions 2kilo
Mint 1kilo
garlic 1/2 kilo
salt
vinegar
instructions:
washed mint and cleaning,peeled the garlic.
Put mint and garlic in mixer machine.
Put all ingredients in the jar and put vinegar top up all of them(full of vinegar) and cloth the jar and keep it for 2weeks or more after that you can use it.
Gerkins is same as pickle onions but you don't need putting mints and garlic in mixer.

2. Add pickling vinegar,
3. Leave until pickled,
4. Eat,
5. Wonder why you bothered.

first peel yor veg and prepare it ..sprinkle with salt, put it in a colander and let the juices drain off. this takes about 3 or 4 hours. rinse. then pack into jars . fill with pickling vinegar.. doing it this way means your veg will stay crisp and not go soggy in the vinegar.
