Homemade thick vegetable soup with all the vegetables grown by me in my garden. Make loads and freeze for over the winter months.

Take 4 pounds (2 kilos) of ripe red tomatoes. Chop an onion and a couple of cloves of garlic. Gently cook the garlic and onion in three or four tablespoons of olive oil until clear, not brown, in a large pot. Add the tomatoes, halved. Add one good vegetable or chicken stock cube, a pinch of ground nutmeg, a quarter teaspoon of mixed spice, a pinch of ground white pepper, a teaspoon of sugar, and half a teaspoon of salt. NO WATER.
Seal the contents of the pot by putting a sheet of cooking foil over before you put the lid on, and scrunch the edge to make a seal.
Cook on a VERY low heat for one hour (no need to stir).
Allow to cool. Pass through a sieve (sorry- you can't use a blender).
Check seasoning and adjust if necessary.
Reheat and serve with a spoonful of creme fraiche and some good crusty bread. Beautiful !

MmMmMm... Nothing could beat a tin of heinz cream of tomato soup, My mum always gave me this when I was feeling ill and didnt have much of an appetite. Even better when nice and hot and dip in some bread and butter. Homemade soup would definately be carrot and coriander(delicious)

Definitely home made. Tinned taste's disgusting. Who eats that *rap anyway? I make a lovely ministrone soup with fresh veg, stock, fine cheese and pasta. You can make lots and freeze it in freezer bags (each portion). When you want a portion, takes just minutes to defrost and cook in a microwave.
