If you have sandwiches for lunch, you need to have some vegetables or fruits at night to balance your diet. How about some stir-fried vegetables + a bowl of chicken soup rice noodles?

<<<<< Stir-fried Assorted Vegetables>>>>>>

1/2 onion, sliced thinly

2) Heat cooking oil in a wok or frying pan over medium heat, stir-fry garlic, ginger and onion for 1 minute or till lightly browned.
3) Turn heat to high, add baby bok choy & peas into the wok, stir fry quickly for 30 seconds, sprinkler cooking wine, stir fry for 1 minute.
4) Add celery in the wok then pour oyster sauce mixture, stir fry until sauce boils and thickens and the bok choy and peas are tender. Remove from heat.
5) Sprinkle a few drops of sesame oil on top. Serve immediately.

<<<<<<< Meatball Vermicelli >>>>>>>

100g dry rice noodle (vermicelli)
6 meatballs (frozen Chinese beef / fish meatballs)
1 can of chicken soup
1 tablespoon cooking oil
fresh corriandor (finely chopped)
green onions (finely chopped)

2) Heat a cooking pot and boil the meatball with chicken soup for 2 minutes
3) Add meatball (defrosted) into the beef stock, boil for 2 minutes, return the vermicelli into the pot, add bean sprouts and cook for 1 minute. Turn off the heat.

Chicken Marinade
2 tablespoon soy sauce
1/2 teaspoon sugar

1 teaspoon sesame oil

1) Wash rice and cook with an electrical rice cooker, follow the instruction to adjust water level with chicken soup.
2) Marinted the chicken pieces for 15 minutes or till rice is almost ready.
3) When rice is nearly done (you see the water is bubbling on the surface of rice but still waterly) before the switch pops up, spread chicken pieces and mushroom slices on top of the rice quickly, cover the cooker as soon as you can.

If i'm real lazy and tired of cooking, I would just fix myself some quick dinner like

<<<<<<<< Tuna Spaghetti >>>>>>>>> Serves 1

1 can of tuna
3 tablespoon of mayonnaise
a few drops of freshly squeezed lemon juice
salt and pepper
a plate of spaghetti (I usually boiled enough for 2 to 3 meals and store it in refrigerator)
2 tablespoon parmasen cheese, grated
1 tablespoon of parsley, finely chopped (optional)

1) Preheat toaster oven (or oven to 180 degree C)
2) mix some mayo with canned tuna and lemon juice with salt and pepper to taste, pour the mixture over spaghetti and put into the micowave to reheat.
3) Sprinkle parmasen cheese on top and put into the oven to bake for 5 minutes or till cheese melted.
4) Sprinkle parsley on top and serve immediately

Well, in that respect...whole wheat is better for you; because, in a low carb diet white bread is processed and is converted to sugar much faster than whole grains.

Bringing healthier lunches to work is primarily a matter of preparation i.e. cooking a bunch of chicken breasts, making a large container of salad, a large container of mixed fruit.

So, that every morning grabbing a lunch is easy. These are just a few things that you can do depending on your own tastes. If you shop properly on Saturday and cook and prep enough on Sunday lunches are easy throughout the week.

Soup. Or a nice casserole. Try Pita bread for a break from the white bread type sandwiches.

As you love samies, go to a local bakery and choose some really nice bread. Then go to your local sainbury's and look at all the different things that you can put on the bread: all types of cheese, all types of lettuce, all types of mayonnaise, different types of tomotoes, different meats, try foreign things. You can have a sandwich from a different country each day and it will still cost less that buying from a store!!

Try pita wraps smeared with hummus, stuffed with loads of salad veggies and spiced chicken, with a drizzle of yogurt dressing. Warm in the microwave for just a few seconds, and voila!

Mmmmm hmmmm good. Really breaks the monotony of regular sandwiches.

Try using whole grain bread. It's a lot better for you than the regular white bread. And yes, whole grain bread also comes in white. Bon appitit

Wraps are a good way to go...you can put anything in them...or cook a good meal at home and take left overs to work with you...vegetable and fruit salads are healthy as well...even a good bowl of homemade chili with crackers or garlic toast. Yummy!

Instead of bread, use tortillas and wrap!

Peanut butter & fruit slices on a rice cake.

Wrap sliced deli roast beef around a kosher pickle or cheese stick.... yummy!

Wheat bread, a fruit salad, or a regular salad. If you have access
to a microwave how about some lean t.v. dinners.

no you wont gain weight. 3500 calories is equal to one pound. so unless your planning on eating another sandwich plus 3000 more calories, you wont gain anything. the sandwich will probably supply you with energy and will probably give your organs a chance to work! i have an ED too. but 800 is my limit!
