Well the best answer is that it depends on the moisture in the finished product and of the environment that the product is exposed to. Jerky properly dried and sealed, vacuumed packed, heat sealed with oxygen scavenger, or gas flushed should last a good 12-18 months. What winds up happening is that that product may become drier over time and brittle or worse yet, that the bag will eventually fail and cause more problems.....

"Take dry jerky and put it in a paper bag in the fridge for a couple days, the moisture in the fridge will rejuvenate dried jerky, but be carefull...too much and you will start growing some fuzzies"

When jerky goes bad and by bad I mean moldy, it is because the moisture content of the meat is not stable enough and the result leads to mold growth. You will find this in "smoked meats" requiring refridgeration, smoked beef sticks on the store counters, or even package jerkies where the bag is leaking....moisture continues to wick into the product from the air until the little fuzzies start to grow.

Bottom line; keep opened jerky refrigerated (better yet, just eat it) and review your bag quality before ingestion......lastly, eat jerky only where there is plenty of light!! :-)

Jerky is simply meat with all the moisture removed. It's one of the oldest known forms of preserving food. As long as it's kept dry, jerky has a shelf life longer than a loaf of white bread with preservatives

If it is made and stored properly it shouldn't go bad for a long time. It can, however dry out and become very tough. Of course when we have it in our house, it doesn't sit around long enough to go bad. It's usually gone within a day.

I didn't think so, but a few years back I had to throw some out that I had for about 6 years. It became hard and brittle like plastic. It actuallly broke up like crackers. I was afraid to eat it so I trashed it.

Didn't cowboys use this to take with them for months on end. I think they just wiped the mold off and ate it. All I can say, I COWBOY UP!
