I think that the best way to say something like that is to say it the simplest way. But that's also one of the hardest ways! Just saying "I love you" can be difficult, I know. For me, sometimes it's just easier to say "I hope you know I love you."

If you really love him there is nothing to say. If you want to say, say by your action and not in a phrase.

Complete one secret ambition of your dad that he always wanted to do. say perhaps when he was young he wanted to publish a book which he couldn't do or he wanted to enjoy a vacation in hawaii or say he want meet his old friends,, Just complete one hidden or secret ambition which might have leaked out of his conversation someday out on the dinner table of the family.... Saying I LOVE YOU IS EASY. but fulfilling his small ambition in your own way e:g by publishing a book, or by giving him travel package tickets or by inviting all his old friends secretely will clearly give the message that "DAD I REALLY LOVE YOU" it doesn't need words it needs action.

How about "I love you, daddy" or is that too mundane for you? You can write it out in a song just like Kelly Bundy did on married with children and say something nice for each letter in the word daddy.
