Chocolate Biscotti
1 1/2 cups all-purpose flour
1/2 cup cocoa
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
2/3 cup granulated sugar
3 tablespoons butter, softened
2 eggs
1/2 teaspoon almond extract
1/2 cup almond, coarsely chopped

Preheat oven to 350 degrees F. Grease 15 x 10-inch baking pan.

In small bowl, combine flour, cocoa, baking powder and baking soda; set aside.

In large mixer bowl, beat sugar, butter, eggs and almond extract until creamy. Gradually beat in flour mixture. Stir in almonds. Divide dough in half. Shape into 2 (12-inch long) logs; flatten slightly. Place in prepared pan. Bake 25 minutes. Cool in pan on wire rack 5 minutes.

Cut into 1/2-inch thick slices. Return slices to pan, cut-sides down. Bake 20 minutes longer. Cool completely.
Makes 4 dozen cookies.

Italian Biscotti
1 cup granulated sugar
3 eggs
1/4 cup butter, melted
1 teaspoon aniseed, lightly crushed
1 teaspoon orange extract
2 cups all-purpose flour, sifted
2 teaspoons baking powder
3/4 cup whole unblanched almonds

Preheat oven to 350 degrees F.

Beat sugar and eggs together until creamy. Beat in melted butter, aniseed, and orange extract. Mix together flour and baking powder. Add to the batter and beat until well blended. Stir in the nuts. Place the dough in the refrigerator and chill for at least 1 hour. (The chilled dough can be kept refrigerated for up to 3 days.)

Shape the dough into a 9 x 6-inch oval 1 1/2 inches thick and place on an ungreased baking sheet. Bake for 20 to 25 minutes, or until firm and lightly browned. Remove the pan from the oven and cool slightly.

Transfer the dough to a cutting board and slice diagonally into 1/2-inch thick pieces. Arrange, cut side down, on the baking sheet and return to the oven. Bake an additional 15 minutes. Transfer the baked Italian Biscotti to wire racks to cool.

Makes 18.

I don't want to be a snob, but except for the biscotti, none of the other answers so far is remotely Italian. The easiest/ most authentic snack recipe is probably bruschetta of one kind or another. For the toasts, take sliced Italian country bread and toast or broil it until crisp, then take it from the oven and IMMEDIATELY rub it very lightly with the cut side of a garlic clove (go easy, or the garlic flavor is too strong), drizzle lightly with a good extra-virgin olive oil, and sprinkle lightly with salt. Then take 2 or 3 really nice ripe tomatoes, chop them roughly, and combine in a small bowl with 1 or 2 cloves of garlic (pressed), salt to taste, a handful shredded basil leaves, and more extra-virgin olive oil. Have your friends spoon the topping on just before eating. A true Italian "snack food".

There are a lot of other toppings for bruschetta too: cooked tiny shrimp with olive oil, lemon, and arugula; sauteed wild mushrooms; black olives with thyme and capers. It's really nice to offer two or three toppings with your bruschetta if you can swing it.
Buon appetito.

Parmesan Bacon Breadsticks
These will be gone in no time I guarantee it! The recipe is from Paula Deen on the Food Network. You buy a package of sesame bread sticks, raw bacon, parmesan cheese, garlic salt.
Cut the bacon strips in half. Wrap one half onto the end of each breadstick, but leave a little part of the breadstick bare as a handle. Bake in the oven until the bacon is cooked fairly good but careful the sticks don't start to burn. As soon as they cool only enough to handle but still warm, dredge them in the parmesan seasoned with a bit of the garlic salt. And serve still warm or at room temp. These are soooo good!
