PUMPKIN MUFFINS
3 1/3 c. flour
2 tsp. baking soda
3 c. sugar
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. ground ginger
Mix dry ingredients and add:
1 c. oil
4 eggs
2/3 c. water
2 c. pumpkin
Preheat oven to 350F degrees.
Prepare muffin tins by greasing with vegetable oil or butter and sprinkling lightly with flour. Shake out excess.
Fill muffin tins three-quarters full and bake at 350 degrees for 20-30 minutes or until toothpick inserted in center comes out clean.
Frost with Orange Icing or Cream Cheese Frosting.

Chocolate Pumpkin Muffins
1 ½ c All purpose flour
½ c Sugar
2 ts Baking powder
½ ts Cinnamon
½ ts Salt
1 c Milk
½ c Solid pack pumpkin
¼ c Melted butter
1 Egg
6 oz Semi sweet chocolate chips
¼ c Finely chopped nuts
Preheat oven to 400. In large bowl combine flour, sugar, baking powder, cinnamon, and salt; make a well in the center. In a small bowl, combine milk, pumpkin, butter and egg; add to well in flour mixture. Add chocolate chips; stir until dry mixture is moistened. Spoon mixture into greased muffin cups, filling each 3/4 full. Sprinkle 1 tsp. nuts over each muffin. Bake at 400 for 18-20 minutes. Cool 5 minutes; remove from pans, completely cool on racks. This recipe makes 12.

Pumpkin-Apple Muffins:
1 2/3 cups all-purpose flour
1 cup sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon baking powder
1 cup canned pumpkin
1/2 cup butter or margarine, melted
2 large eggs, lightly beaten
1 Granny Smith apple, peeled and finely chopped
3 tablespoons sugar
1 teaspoon pumpkin pie spice
Combine first 6 ingredients in a large bowl; make a well in center of mixture.
Combine pumpkin, butter, and eggs, and add to dry ingredients, stirring just until moistened. Fold in chopped apple, and spoon into greased muffin pans, filling two-thirds full.
Combine 3 tablespoons sugar and 1 teaspoon pumpkin pie spice; sprinkle evenly over muffins.
Bake at 350° for 20 minutes. Remove from pans immediately, and cool on wire racks.
Yield: 2 dozen

DIRECTIONS:

In a medium bowl, mix the flour, baking soda, baking powder, cinnamon and salt. Blend into the egg and pumpkin mixture. Fold in the chocolate chips. Transfer to the muffin pans.
Bake in the preheated oven 15 to 20 minutes, or until a toothpick inserted in the center comes out clean. Remove muffins from pans, and cool on a wire rack.
