It is not true that Romanian is like the rest of romance languages. It is the one that is further from the rest. It has declention of nouns, which is a characteristic all the rest abandoned. I can read Portugues, French and Italian, being Spanish my native. But I have a hard time when reading Romanian.
About grammar... I think it is as hard as for Spanish. Pronunciation is not really big deal. I only struggle with the sound of the letter ă. but the rest is not really a problem. Maybe the â/î may represent a little problem. It sounds as Russian ы.
I'd suggest to check http://www.phrasebase.com to see if you can get one of the Romanian native speaker to help you.

Romanian is very similar to Latin language and modern Italian.
For Anglo-Saxons, and other Indo-Europeans it is probably
not a real problem. Structure of these languages are almost the same. But the best and quickest way to learn foreign language is to spend some time in that country...
Maybe, your husband could pay a little visit to Vladimir Tsepesh
(Count Dracula's) castle. (ha,ha)

I think if you've taken another romance language (Spanish, Italian, French, Portuguese) then it shouldn't be that hard, because a lot of the words would be similar.

I would be wary of how you learn it. I took Japanese lessons from someone who stuttered while teaching me phrases. I went to a Japanese restaurant to order dinner and the waitress said "You speak good Japanese if you dint stutter".
