I like to add a full packet of (Lipton) onion soup mix
Don't forget chopped garlic, chili powder, chili sauce, mushrooms, tomato ketchup and tomato paste, onions, onion powder, any herbs at all, etc....
Experiment. If you like the taste of it - throw it in

some salt, some chili peppers, some garlic(if you like). In fact just about anything you would use to spice spaghetti sauce or chili con carne. If you want to get exotic you can play with east indian style seasonings aiming possibly for a curry flavour. Once you have mixed into it your tomato paste though you are pretty much commited to Italian, Mexican and North American themes. If you have not added the ketchup or tomato soiup then you might try mushroom soup and milder black pepper and cream type seasonings like celery or sage. There are so many ways to make a meat loaf that it is crazy. After all it is just meat, extenders (like oatmeal, bread crumbs), binders(starch,flour,egg) and extra moisture. any onions or other fresh veggies, even canned veggies that will be cooked when the loaf is done can be included.

If you're looking to spice things up, try this chipotle meatloaf combination:

1 chipotle chile, chopped
1/2 c finely chopped onion
1/2 chopped cilantro
1/4 c regular oats
1/4 c breadcrumbs
1/4 c tomato sauce
2 tsp dry parsley
1tsp salt
1/2 tsp cumin
1/2 tsp dry oregano
1/4 tsp dry basil
1/4 tsp black pepper
2 minced garlic cloves
2 large egg whites
2 lbs meat

Topping: 1/4 tomato sauce, 1 tbs ketchep, 1/2 tsp hot sauce

Preheat oven to 350. Throw all the meatloaf ingrediants in a bowl, mix to combine, and then place in a 9 x 5 loaf pan coated with cooking spray. Bake uncovered for 30 minutes. Combine ingrediants for topping, brush over meat loaf, and bake another 3 minutes. Let stand 10 minutes before slicing.

This makes a great meatloaf all the kids love it.
ground beef
salt & pepper
1 tsp.mustard
1 cup parmesean cheese
1/2-1 cup bread crumbs
3 eggs
1/2 milk
parsley
a lil onion
Mix well. form. Pour tomatoe sauce over the top. Bake and serve

The easiest way is lipton's french onion soup mix w/ beaten eggs and some bread crumbs for texture and body. I add a mixture of cayenne and red chili pepper flakes (for a little kick), minced onions, oregano, kosher salt, fresh ground pepper, and some tomato paste or ketchup if I'm out. A little Parmesan doesn't hurt, too. That adds an Italian flavor and goes great with the oregano.

Campbell's Tomato soup is the topper with American cheese slices cause my little brother likes it extra cheesy.

i serve meatloaf w/ either creamy mashed potatoes or mac & cheese.

1/2 ground beef and 1/2 ground pork; then add salt, pepper, garlic powder, 1 or 2 eggs, some milk, bread crumbs, some chopped parsley, some sauted chopped onions and mushrooms, a little Worchershire sauce. Bake for 1 hour at 375, then pour some chili flavored tomato sauce on top and bake another 30 minutes.

Meatloaf:
1/2 cup olive oil
4 pounds red bell pepper, cored, seeded, and minced
4 pounds onion, trimmed and minced
1 1/2 cups minced garlic
1 1/2 cups soy sauce
6 tablespoons salt
4 tablespoons black pepper
24 eggs
6 cups cream
10 pounds bread crumbs
31 pounds ground beef
3 1/2 cups tomato paste
Meatloaf Gravy, recipe follows


Preheat oven to 325 degrees F.
Heat oil in a pot. Saute bell pepper, onion, and garlic in the hot oil for 5 minutes. Let it cool. Mix soy sauce, salt, black pepper, eggs, cream, and bread crumbs together well. Add oil, bell pepper, onion, and garlic and mix well. By hand, mix ground beef.

Place 6-1/2 pounds of this mix into each meatloaf pan. Ice the top of each loaf with 1/2 cup of tomato paste. Bake for about 2 hours, until the internal temperature reaches 160 degrees. Remove the pans from the oven and drain all of the grease out well. Cool in pans until cool enough to turn out. Serve with Meatloaf Gravy.


Meatloaf Gravy:
3 pounds butter
5 pounds diced onions
5 pounds chopped mushrooms
1/4 cup minced garlic
2 3/4 pounds pastry flour
5 1/2 gallon water
1 3/4 pounds beef base
10 bay leaves
2 tablespoons black pepper

Melt butter in large pot. When hot, add onions, mushrooms, and garlic and saute until softened and golden. Add flour and mix in well to make a roux. Add water, beef base, bay leaves, and pepper and mix well. Bring to a boil. Then simmer for 30 minutes or until thickened enough. Strain and cool.
