Dutch is the closest language to English, and has very similar sentence structure that makes it easy to learn. Spanish is also an easier language to learn, and once you know one Romance language, like spanish, its easy to learn others like French, Italian, and Portugese

I guess it depends on your own thought process and abilities. Gaelic is quite different from English, but can be simple enough to learn once you get the rules down. For example, there is no "Yes" or "No" in Gaelic. Everything is answered by saying Am/Am not, Will/Will not, Was/Was not etc....
I think all languages are hard to learn unless you can get some immersion or instruction. It's tough to learn solely from a book, but audio/video courses are helpful.

If English is your only language, then I would say Spanish is the easiest and most widely used. That's why I took Spanish. Plus it would make learning Portuguese and Italian much easier.
If you seek fluency, Greek would be quite difficult. Some Greek classes might be fairly easy, but you won't be very close to having a meaningful conversation or writing a meaningful correspondence.

Spanish is really easy. I don't know about Greek, but I think Gaelic would be kinda hard. German would be fairly easy, because a lot of words are similar to English. For example: 'Du hast hunger?' means 'Are you hungry?'

im not sure about the easiest, but i know that spanish and french are pretty hard, because theres all those different conjugations, and gender specifics, and also number specifics... i hate taking spanish in school right now.. its pretty dreadful if you ask me..
