The last bachelor's party I went to had bowling, go-kart racing and dinner afterwards.
We started a list of all the activities that would normally be included in a corporate get-away, then pruned down the list to two activities most voted for (we used e-mail to organise). The arrangements worked so well that our wives/girlfriends invited themselves along also.
It turned out to be a lot better experience than having (semi-)naked women gyrating in a sleazy establishment.

it is nice to know you are planning to have a civilized evening =) I really liked the first answer about the wine tasting, it is a lot of fun, and people who enjoy different interests would enjoy this, especially if they had never experienced it before.

Depends on whether you want to stay in or go out, and whether he has any particular interests. You could go go deep-sea fishing, to an arcade, on a bar crawl, etc. My cousin had the groomsmen and some friends take a weekend sailing trip, and I know a bunch of guys that went up to a cabin for a weekend instead of going out. They got to drink and hang out, and not worry about getting home in one piece at the end of the night.
If you want to stay in, you could organize a Simpsons/Seinfeld/whatever marathon with lots of food, and find some drinking games to go along with it.

For my bachelor party, we went to a bunch of wineries during the day, and Foxwoods Casino at night. It was a lot of fun!!! Other bachelor parties I've attended we went to paintball, ball games.

No women, eh?....how about fireworks, booze, drugs, guns, explosives, fire trucks, paramedics, swords, sheep, police cars, handcuffs, s.w.a.t. teams, porno, hockey sticks, gasoline, flares, knives, drag racing, streaking, barbed wire, bow and arrows, lawn darts, rattle snakes, more booze, spears, baseball bats, moonshine and bingo.
But women would REALLY be a lot more fun!
