Preheat oven to 350.

Take a box or two of frozen, chopped spinach.

Defrost (microwave). Drain.

Put in an oven-safe dish.

Smother in shredded mozzarella or cheddar.

Bake 30 - 45 minutes, or until spinach is hot, and cheese is melted and starting to brown.

Serve as an entree, or a side dish.

Yummy! :-))

I must say, the person who said, "CHEESE FRIES!!!" is a GENIUS! :-))

..............................

Get some brie, some french bread, some sliced almonds, and some granny smith apples.

Cover the slices of french bread with slices of brie, top with sliced almonds.

Broil til the cheese is melted, and bubbly, and the almonds are starting to brown.

Serve with peeled, sliced apples.

Heavenly!

Try this one:

1 lb cooked elbow mac
1 lb velveeta, cubed
1 lb shredded cheese (split between cheddar and the casserole mix)
1 cup milk
1/4 cup butter
salt, pepper, onion powder

Preheat oven to 350. Place butter in about 10 evenly divided pats on the bottom of a large casserole dish. Pour 1/2 macaroni, 1/2 of each cheese, 1/2 milk and a generous amount of each seasoning, then do the same again. Put it in the oven for 15 minutes, take it out and stir it, put it back in for 15 minutes or until it starts getting just browned on top.

This is the richest, cheesiest mac n cheese ever, and the onion powder gives it an extra kick that makes everyone fall instantly in love with it. Always the first to go at every pot luck!

Buy manicotti noodles--they are hollow pasta tubes about 5 inches long andmaybe an inc or 2 in diameter. Cook slightly, then fill with a blend of your favorite cheeses. Bake in a tomato sauce. Drippy cheese everywhere.mmmmmmmmm!

Cheese is my favorite food---I could live on nothing but!

Cheese Spaghetti! I know it sounds gross but it's really good. Just substitute the tomato sauce for Velveeta cheese and the ground beef for cut up pieces of chicken breast. I like to add a jar of Pace picante and just top it with shredded colby and monterrey jack cheese! SOOOOOOO GOOD!

Try good old fashioned baked macaroni and cheese, with italian cheeses, including a ricotta topping. Just might meet your match.

Potatoes Au Gratin are EXTRA good and cheesalicious!
Broccoli, cheese, and rice casserole is good too, it's made with Campbell's cream of celery soup. They have great recipes at Allrecipes.com and Recipezaar.com that should give you more than enough ideas.

i make a dish i call chicken parmafredo.

pretty much just mix red sauce with the alfredo. the alfredo is what makes it special. very fattening though.(i just go easy on the sauce)

alfredo sauce (my own recipie-i'm pretty proud of it)

2.5T of butter
1.5T flour
1c 1/2 &1/2
1/2 c grated parmesian
1/4 c cream cheese
1/4c milk

melt butter over low to medium heat, wisk in flour, add 1/2 & 1/2,

turn heat to medium to medium-high, wisk regularly. as steam starts to rise, add cheeses and wisk until smooth.bring just to boil and remove from heat. let stand 4-5 mins and thin with milk to desired consistancy. salt and pepper to taste-i like extra freshly crushed black pepper on mine, goes good with the parm.

when i make the chicken, i usually bone it and fry it up "nugget" style-more surface area for the cheese to stick to.

also the chicken parm is really good with asiago AND mozzarella!

my red sauce is of the spicy variety-i think it goes better with the pungency of the alfredo sauce. mixed together, it's like a tongue orgasm!

boil noodles. saute onions and small veggie pieces like zuccini, mushrooms, whatever. throw in a can of cream of mushroom soup and a splash of milk. stir until hot, add a squirt of mustard, a dash of garlic, and a ton of swiss cheese. when the cheese is melty and stringy, mix in the noodles and enjoy. really amazing how swiss tastes when melted.
