There is still bacteria and other contaminents in the water. Bottling the water keeps all of these in a central location and they are able to multiply and not disperse through the rest of the water. It is a best if used by date, you may notice a stale taste or a different taste after that date. Throw in the break down of the plastic, and the need for everthing used in the US to have a best buy date.
