Very simple...go to a supermarket where there is a butcher, like the Supersol chain, for example.
Pick out the piece of meat you like, and have them grind it for you. (The only meat they will no longer grind is chicken.)
The Hipercor (Corte Inglés Supermarket) will also grind meat for you.
Either that or find yourself an old fashioned butcher shop, and again pick your meat and have it minced... There are still a lot of butchers in Spain.

Buy the meat and mince it yourself or chop it very finely as they seem to do
