Welfare Cake
"This cake is so moist that you would swear it was from a box!"
Original recipe yield: 1 - 9x13 inch pan.
INGREDIENTS:
3 cups all-purpose flour
2 cups white sugar
1/2 cup unsweetened cocoa powder
2 teaspoons salt
1 tablespoon baking soda
1/2 cup vegetable oil
2 tablespoons distilled white vinegar
1 1/2 teaspoons vanilla extract
2 cups water
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine flour, sugar, cocoa, salt and baking soda. Make a well in the center, and pour in the oil, vinegar, water and vanilla.
Mix well, then pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into the center comes out clean.

I have an awesome one that tastes sort of like that Applebee's "Melt Down" chocolate cake, where the cake makes it's own hot fudge sauce- it sort of appears while baking...
preheat oven to 350
1 c flour
3/4 c sugar
2 T cocoa
2 tsp baking powder
1/2 tsp salt
1/2 c milk
2 T olive oil
1 tsp vanilla
Mix dry ingredients, then stir in milk and vanilla. Pour into ungreased 9 x 9.
Combine:
1 c brown sugar
4 T cocoa
Sprinkle evenly over cake batter. Pour 1 3/4 c HOT water over the top. DO NOT STIR... Bake for 35-40 minutes. Tastes best with some vanilla bean ice cream or still slightly frozen Cool Whip.

I have a chocolate cake recipe that I have used. One 12 oz can of coke, or Pepsi, diet and caffeine free. to one box of cake mix.
Mix together and bake for about 30 minutes in preheated oven of 350 degrees. for a yellow cake use sprite or 7 up. The cake comes out almost like a brownie. I also pour french vanilla pudding over the top for the icing. My friend told me it was from weight watchers. My kids love it. You can use regular cola instead of the diet and caffeine free ones.

Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven and allow to cool.

Sounds crazy,but it is very rich and moist.It's also low fat.
1 chocolate cake mix and 1 can of pumpkin.
