One of my favorites.
1 - 2 sliced zucchini
A few additional assorted veggies, these are my favorites...
a handful of fresh green beans
a couple of broccoli spears cut into small pieces
a sliced carrot
1 can of diced tomatoes (drained)
Balsamic vinegar (optional)
Herbed feta cheese (regular feta without the herbs will work as well).
Saute the vegetables in olive oil. Be sure to put the ones that take longer to cook in first. When done, reduce heat and put in the can of diced tomatoes. Blend until warmed through. Remove from heat and add a splash of Balsamic vinegar (optional). Plate and sprinkle the herbed feta cheese over the top.
Yum!

I won $100 in a recipe contest for the simplest thing in the universe... crockpot meatballs.
You just layer frozen meatballs, cut up zucchini and fresh mushrooms in a crockpot... then dump jar sauce over the whole thing... rinse the jar with a little Italian red wine... let it cook all day. Serve over cooked pasta and pass shredded parmesan cheese.
Same recipe can be done in oven at 350 for about 1 1/2 hours or on top of stove by simmering on low for about 1 1/2 to 2 hours.
I've been known to just cook the zucchini and mushrooms and some yellow squash in the jar sauce too... because I'm not much of a meat eater. You can also substitute chicken :)

Chicken Zucchini Fettucini:
2 c cooked chicken breast, diced
2 TBS butter
1 lb zucchini, sliced
2 med onions, chopped
1 1/2 lb tomatoes, chunked
1/3 c oregano fresh or 1 tsp dried
4 c corn kernels
s&p
fetuccini noodles
Saute onion @8 min. Stir in zucchini, tomatoes, oregano, s&p. Cover and cook @15 min. Start fettucini. Stir corn and chicken in, cover and cook @5-8 min. Adjust seasonings if necessary. Serve over cooked fettucini.

another zucchini recipe without the pasta or can use buttered pasta as a side dish:
Fish Rolls Primavera:
1 c carrots, shredded
1 c zucchini, shredded
2 TBS onion, finely chopped
1/2 c breadcrumbs
1/8 tsp thyme leaves
1/4 c butter, melted
4 fish fillets
Preheat to 375. Combine veggies, breadcrumbs, and thyme. Combine butter and lemon. Add 1/4 c to veg mixture. In shallow baking dish, place equal amount veggie mixture on each fillet; roll up. Pour remaining butter over fillets. Bake 15 min.

1-1/2 cups 1-inch broccoli pieces, including stems
1 cup quartered zucchini slices
2 tbsp margarine
7 oz. spaghetti, broken (or elbow macaroni or other pasta)
1-1/2 cups ham strips
1 (8 oz.) jar Cheez Whiz
1/4 tsp oregano leaves, crushed
1/8 tsp pepper
Stir-fry broccoli and zucchini in margarine until crisp-tender. Cook spaghetti (or other pasta) as directed on package, drain, and return to pan. Add remaining ingredients and heat thoroughly, stirring occasionally. Yields 4-6 servings.

You could try this cut your zucchini into cubes, put in a frying pan with olive oil,add a can of stew tomatoes (or cube fresh tomatoes) and some italian seasoning and parsley flakes.
Fry till zucchini get soft add remaining ingredents then serve over any style of pasta. ( Add green or red peppers if you would like)

Saute zucchini, onions, and garlic in a little olive oil. Add mushrooms, and whatever other veggies you like. When it's done, add some italian dressing to it and put it over pasta - different and really good!

Zucchini Alfredo:
INGREDIENTS:
1 (12 ounce) package uncooked egg noodles
3 tablespoons vegetable oil
2 cloves garlic, minced
4 cups shredded zucchini
1/2 cup milk
4 ounces cream cheese, cubed
1/2 cup chopped fresh basil
salt and pepper to taste
grated Parmesan cheese (optional)

DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Add egg noodles and cook for 8 to 10 minutes or until al dente; drain.
Heat the oil in a skillet over medium heat. Stir in garlic, and cook 2 minutes. Mix in zucchini, and cook 10 minutes, until some of the moisture has evaporated.
Pour the milk into the skillet, and stir in cream cheese until melted. Mix in basil. Season with salt and pepper, and sprinkle with Parmesan cheese. Serve over the cooked pasta.

I saute zucchini all the time, mixed with other vegetables (usually mushrooms, baby corn, peppers, onions). It's great with just the vegetables or added to chicken or pasta. Quick and healthy.

1 cup zuchini cubed.
1/2 cup green pepper cubed
1 med onion sliced thin
1/2 cup sliced carrots
1/2 cup diced celery
1 cup diced tomatoes drained
cook pasta of your choice according to package directions.
in a medium skillet, heat 1/4 cup olive oil. Gently add all cut vegetables (and shrimp or scallops if desired) except tomatoes and saute just till tender. slowly add pinch of dried basil, oregano,parsley, garlic powder, fennel, and peppermint. add 1/2 teasp of salt (more or less to taste.) Add tomatoes and 1/4 cup dry white wine and heat till it begins to bubble. Pour over pasta. Uhmm!

Made a sausage tortellini soup last night with sausage, tortellini, stewed tomoatoes, onions, and zuchini.
With other meals, throw some zuchini, onions, and corn in a pan and heat until softened. Then top with graded cheese. Yum.
