Spaghetti and Meatball Stoup (thicker than soup but thinner than stew)
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 carrot, peeled and chopped into a small dice
1 medium yellow skinned onion, chopped
2 small ribs celery from the heart, chopped
3 cloves garlic, chopped
3 cups tomato sauce or 1 (14-ounce) can plus 1 (8-ounce) can
3 cups chicken stock, available in a box on the soup aisle
1 pound ground beef, pork and veal mix (meatloaf mix) available at butcher counter
1/2 cup grated cheese, Parmigiano or Romano, plus more to pass at table
1/2 cup Italian bread crumbs, a few handfuls
1 large egg, beaten
2 tablespoons chopped parsley leaves
1/2 pound spaghetti, broken in half
1 cup basil leaves, torn or shredded
1 loaf Italian crusty bread, for dunking
Preheat a medium soup pot over medium heat. Add extra-virgin olive oil, 2 turns of the pan, carrots, onions, celery, garlic and saute 5 minutes. Add tomato sauce and stock and cover pot. Turn up heat and bring to a fast boil.
While soup comes to a boil, mix the ground meat with cheese, bread crumbs, egg and parsley. Roll into 1 1/2 to 2-inch balls.
Remove lid from soup and slide balls into soup. Bring back to a boil then stir in spaghetti. Reduce the heat and simmer soup 10 minutes more, until pasta is tender and balls have cooked through. Stir in basil and remove "stoup" from the stove. Serve soup with bread and cheese
I tried this and was very surprised at how good this was...

Omelettes In A Bag
(1 serving) Printable Version
* 2 Large Eggs
* 1 Tablespoon of Cheese
* 1 Tablespoon or so of any other ingredient you like in your omelette (like bacon or onion) - Optional
* 1 Small Ziploc Bag
Crack eggs right into the small Ziploc bag. Add the cheese and any option ingredients you like. Seal the bag, squish the ingredients to mix. "Burp" the air out.
Bring a medium-sized pan of water to a heavy boil.
Drop Ziploc baggie into the boiling water. Boil for 5 minunte.
Carefully, remove baggie from the water. Open the bag and roll the omelette onto a plate. YUM !

I am not much of a chef, but this is a quick and easy dish. Take a pasta of your choice (my favorite is linguine,) and cook it al dente. Buy Classico's sun-dried tomato alfredo sauce (it is very tasty.) Also buy fresh tomatoes and cooked chicken breast from the deli section to put into the sauce. Pour the sauce on top of the al dente pasta and sautee until warm. For salad, make it simple with cucumbers, tomatoes, oil and vinegar, crumbled feta with basil (they sell this at the market,) and top with salt and pepper. This all sounds like a lot of steps, but it is super easy and very yummy!

Noodles and cheese (Kraft Dinner) add a can of tuna and some veggies eg. peas, shredded carrots/zuchini, etc. My kids love it! Another one is make tuna salad with finely chopped carrots and put it on brown toast put a slice of cheese on top and put under the broiler for a few minutes - covers all the food groups!

Quick Enchilada casserole.
1 lb. hamburger meat.(or any ground meat you like)
1-2 cans rotel tomato's.
1 pk. taco seasoning
1 can of green Chile's (diced)
1 can pinto beans
Corn tortillas (or flour is fine)
2-3 cups of shredded cheese
In a skillet brown hamb. meat, than add tomato's, Chile's, taco seasoning and beans warm all together. heat oven to 350, in a greased casserole dish line the bottom with tortillas then add the meat mixture. the add a good layer of cheese. the top with another layer of tortillas and another layer of cheese. bake for about 10-15 minutes, mainly to melt cheese. then top with sour cream and enjoy.

ONE-PAN ITALIAN PASTA
2 lb. ground beef
2 cloves garlic, minced
1 can (14.5 oz.) diced tomatoes, undrained
1 can (14-1/2 oz.) beef broth
1 cup water
2 cups bow tie pasta (farfalle), uncooked
1 medium zucchini, sliced
1 can (6 oz.) tomato paste
1/4 tsp. Italian seasoning
1 cup KRAFT Shredded Mild Cheddar Cheese
BROWN meat with garlic in large skillet; drain. Return to skillet.
ADD tomatoes with their liquid, the broth and water; mix well. Bring to boil. Add pasta and zucchini; mix well. Cover. Reduce heat to medium; simmer 15 min. or until pasta is tender.
STIR in tomato paste and Italian seasoning until well blended. Sprinkle with cheese.

Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all ingredients in crock pot. Mix and cook low 4-6 hours.

1/3 Cup Parmesan cheese, grated

1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated
Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.
In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.
In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.
Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Serves 6
1-1/2 lb Ground Beef, lean
1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)
Instructions:
Preheat the oven to 350ºF
In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.
Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.
Bake for 45 minutes; drain any residual fat if necessary.
Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray
Instructions:
Preheat the oven to 350ºF
Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.
Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.
Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.
Serve immediately.

1 Cup Frozen Strawberries, thawed
2 Tbsp Honey

Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.
Pour into glasses; garnish each with a whole strawberry

Simple: Philly cheesesteaks
All you need: thin cut/sliced steak, a few slices of white American or swiss cheese, onions & peppers, veg. oil and rolls.
Heat a cap full of oil in a large pan and cook all meat until brown.
In a smaller pan, carmelize a bunch of onions & green peppers.
Mix all together and add cheese until melted.
Throw on bun.
